Gorgonzola and Porcini Mushroom Risotto

In a medium saucepan, bring the stock to a boil over medium-high heat
- 4 cups low-sodium chicken stock
- 1 1/2 ounces dried porcini mushrooms
- 3 tablespoons butter
- 1 medium onion, diced
- 1 1/2 cups Arborio rice
- 1/2 cup dry white wine
- 1/2 cup grated Parmesan
- 3/4 cup (3 ounces) Gorgonzola, crumbled
- 1/4 cup chopped fresh chives
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Strawberry Oatmeal

In medium bowl combine strawberries, (hulled and sliced) and brown sugar and gently stir to coat
- 2 cups quick oats
- 1 pint strawberries
- 1 3/4 cups milk
- 1 3/4 cups water
- 4 tbsp sour cream
- 3 tbsp brown sugar
- 1/4 tsp salt
Frosty Citrus Punch

Mix Limeade concentrate and water in large pitcher
- 2 cans frozen lemonade or limeade
- 3 cups cold water
- 1/2 pint lime or lemon sorbet, softened
Caramel Apple Pie

Transfer 1 dough round to a 9-inch deep-dish pie dish and gently press into the dish
- For the apples:
- 2 rolled-out rounds deep-dish piecrust (see related recipe at left)
- 4 lb. Granny Smith apples, peeled, cored and each cut into 8 slices
- 1/2 cup firmly packed light brown sugar
- 1/2 tsp. ground cinnamon
- 1/4 tsp. freshly grated nutmeg
- 1 Tbs. fresh lemon juice
- 3 Tbs. cornstarch
- For the caramel:
- 1 1/2 cups firmly packed light brown sugar
- 1/3 cup light corn syrup
- 6 Tbs. (3/4 stick) unsalted butter, cut into 6 pieces
- 1/2 tsp. kosher salt
- 1/2 cup heavy cream
- 1 egg white, beaten with 1 tsp. water
- 2 tsp. granulated sugar
Parmesan-Shrimp Pasta Bake

Heat oven to 350ºF. Grease shallow 2-quart casserole with shortening, or spray with cooking spray
- 1 package (16 ounces) farfalle (bow-tie) pasta
- 6 tablespoons butter or margarine
- 3 cloves garlic, finely chopped
- 6 tablespoons Gold Medal® all-purpose flour
- 1/3 cup dry vermouth or chicken broth
- 2 3/4 cups half-and-half
- 1/2 cup clam juice
- 1 tablespoon tomato paste or ketchup
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 pound uncooked peeled deveined medium shrimp, thawed if frozen
- 2 tablespoons chopped fresh or 2 teaspoons dried dill weed
- 3/4 cup freshly grated Parmesan cheese

Bittersweet Ribs

Put soup mix in plastic ziplock and shake with ribs
- 4 Racks of Pork Back Ribs
- 1 Onion Chopped
- 1 Pckg. Onion Soup Mix
- 1/2 Cup Brown Sugar
- 3 Garlic Cloves Chopped
- 1 Bottle Peach Schnapps or 1 Large Jar Grape jelly
- 1 Bottle BBQ Sauce (Store Bought)
- 5-6 Shakes Worcestershire Sauce
Fruit Topped Cheescake

Preheat oven to 350. Mix cream cheese, sugar and vanilla until well blended
- 2 pkgs cream cheese
- 1/2 cup sugar
- 1/2 tsp vanilla
- 2 eggs
- 1 graham crust
- 2 cups assorted sliced fresh fruit
- 2 tbsp strawberry or apple jelly, heated, opt.
Creamy Chicken Noodle Soup

Remove the skin from the chicken and shred the meat from the bone
- 1 store-bought roasted chicken
- 1 cup diced onions
- 1 cup diced celery
- 1 cup diced carrot
- 4 (14-ounce) cans low-sodium chicken broth
- 2 (10.75-ounce) cans condensed cream of mushroom soup with roasted garlic
- 2 teaspoon fines herbs*
- Salt and pepper
- 2 cups egg noodles, cooked
Brownies

Preheat oven to 350. Line and 8x8 baking pan with parchement paper
- 1/2 cup butter
- 2 oz. semi-sweet chocolate
- 2 oz. usweetened chocolate
- 2 oz. bittersweet chocolate
- 1 cup sugar

- 1/2 tsp. vanilla
- 3/4 cup flour
- 1/2 tsp. baking powder
