Rigatoni with Eggplant and Pine Nut Crunch

Preheat oven to 425°F. Spray large rimmed baking sheet with nonstick spray; add eggplant and peppers
- Nonstick vegetable oil spray
- 1 unpeeled large eggplant (1 1/2 to 1 3/4 pounds), cut into 1/2-inch cubes
- 2 medium yellow bell peppers, cut into 1/2-inch squares
- 2 cups grape tomatoes
- 3 large garlic cloves, divided
- 1/3 cup olive oil
- 2 cups (firmly packed) fresh basil leaves, divided
- 1 cup freshly grated Parmesan cheese, divided
- 1/4 cup pine nuts
- 1 28-ounce can whole tomatoes in juice
- 1 cup heavy whipping cream
- 1 pound rigatoni
- 1 pound whole-milk mozzarella cheese, cut into 1/2-inch cubes
Cinnamon Sugar Oatmeal

In a medium saucepan, bring the water and salt to a boil
- 2 and 1/2 cups water
- 1 pinch salt
- 2 cups quick oats
- 2 Tablespoons sugar
- 1/2 teaspoon cinnamon

Honey Glazed Ribs

- 2 pounds lean back ribs
- 1 can (10 1/2 ounces) condensed beef broth
- 1/2 cup water
- 2 tablespoons maple syrup
- 2 tablespoons honey
- 3 tablespoons soy sauce (low sodium)
- 2 tablespoons barbecue sauce
- 1/2 teaspoon dry mustard

- 1/4 cup butterscotch chips

- 1 1/2 cups marshmallow cream
- 1/4 cup peanut butter
- 1 tsp vanilla
- Caramel layer:
- 1 pkg caramels
- 1/4 cup whipping cream

- 1 cup butterscotch chips
- 1 cup peanut butter

- 1 cup heavy cream
- 2 tbsp confectioners sugar
