Smothered Pork Chops

- 8 thinly cut (about 1/2-inch thick) pork chops (about 3 pounds total)
- 2 teaspoons Essence, recipe follows
- 1/2 cup olive oil
- 1/4 cup plus 2 tablespoons all-purpose flour
- 4 cups thinly sliced onions
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon chopped garlic
- 4 bay leaves
- 3 1/2 cups chicken stock
- 3/4 cup plus 2 tablespoons water
- 1 pound smoked sausage or andouille, cut crosswise into 1-inch slices
- 1 pound russet potatoes, peeled and cut into 1-inch cubes
- Steamed white rice or rice pilaf, for serving
Marinated Grilled Hanger Steak

In a small bowl, combine the Dijon, garlic, rosemary, lemon juice and zest, and crushed red pepper
- 4 tablespoons Dijon mustard
- 3 cloves garlic, smashed and finely chopped
- Pinch crushed red pepper
- 2 sprigs rosemary, picked and finely chopped
- Juice and zest of 1 lemon
- 2 (1 1/2-pound each) hanger steaks, trimmed, membrane removed and cut in half lengthwise
- Kosher salt
- Extra-virgin olive oil
Chinese BBQ Pork

Mix all ingredients and place pork in to marinate at least 3 hours
- 1 1-2 lb Pork Tenderloin
- 3 Tbl Hosin Sauce
- 3 Tbl Ketchup
- 1/2 Tsp Five Spice
- 1 Tbl Mirin Sweet Sake
- 1 Tbl Sugar
- 1/2 Tsp Salt
- 2 Slices Ginger
- 2 Cloves Fresh Garlic
Grandma's Zuccini Bread

Bake at 325 degrees in 2 loaf pans for one hour or until tooth pick comes out dry
- 2 C. Sugar
- 2 Tsp Vanilla
- 1 Tsp Baking Soda
- 1/4 Tsp Baking Powder
- 1 1/2 Tsp Cinamon
- 3 Eggs
- 3 C. Flour
- 1 Tsp Salt
- 1/4 C. nuts
- 1 C. Oil
- 2 C. Raw Zucchini Peeled and blended (use a little water to blend)
Open-Face Pork Tacos

Directions: Preheat the oven to 350°
- 4 center-cut pork loin chops
- Salt and pepper
- Juice of 6 oranges, plus grated peel of 1 orange
- 1 sweet onion, thinly sliced
- One 28-ounce can crushed tomatoes
- 2 canned chipotle chiles in adobo sauce, plus 2 teaspoons sauce
- 2 ripe plantains, unpeeled, halved crosswise and lengthwise
- Twelve 6-inch corn tortillas
- 2 avocados, cut into cubes
Sloppy Joe's

Brown Hamburger - drain off grease
- 1 - 1 1/2 Lbs Hamburger
- 1 sm. can tomatoe sauce
- diced onion
- 2 Tbls Vinegar
- 1 1/2 tsp sugar
Sauce for Drumettes

Mix all ingredients together and pour over drumettes
- 1/2 C Olive Oil
- 1/2 Small Onion diced
- 1 1/2 Tbls Lemon Juice
- 1/4 C Soy Sauce
- 1/2 C Teriyaki Sauce
- 1 Clove Garlic
- 1 Pkg Drumettes (12 in a Pkg)
Lemon Meringue Pie

- 1/2 cup lemon juice
- 1 teaspoon grated lemon zest
- 3 egg yolks
- 1 (8-inch) prebaked pie shell or crumb crust
- 3 egg whites
- 1/4 teaspoon cream or tartar
- 1/4 cup sugar
Chocolate Mayonnaise Cake

Apple Crisp

- 1/2 cup golden raisins
- 1 1/2 sticks butter

- 2 tablespoons lemon zest
