Italian Zucchini

Cook bacon until Crisp, remove and crumble
- 4 Slices Bacon
- 1 C. Sliced Onion
- 2 Cloves Garlic - minced
- 2 Tsp Oregano Leaves - Crushed
- 1/4 Tsp Basil Leaves - curshed
- 1 Can Tomatoe Soup
- 1/2 C Water
- 4 Med Zucchini - cut in 1/2" slices
- Grated Parmesean
Candied Yams

- 4 pounds yams (or sweet potatoes), peeled and cut to large bite-sized pieces
- 2 cups orange juice
- 3 cups light corn syrup
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 2 teaspoons lemon zest
- 2 tablespoons flour
- 1 1/2 cups light brown sugar, packed
- 1 1/2 cups granulated sugar
Chocolate River over Drunken Berries

- 1 pint strawberries, hulled and halved
- 1 nip orange liqueur (recommended: Grand Marnier)
- 3/4 cup dark chocolate pieces - reserve a few shavings
- 1/2 cup cream
- Pinch salt
- Whipped cream, homemade or store bought
- 2 teaspoons orange zest
Zuccini Relish

- 10 C. Zucchini
- 4 C. Onion
- 1 Lg. Red Pepper
- 5 Cups Sugar
- 1 Tbl Turmerick
- 1 Tsp Nutmeg
- 2 Tsp Celery Seed
- 2 1/4 C Dark Vinegar
- 1 Tbl Black Pepper
Bourbon and Brown Sugar Flank Steak with Garlic-Chive Mashed Potatoes

To prepare steak, combine first 7 ingredients in a large zip-top plastic bag; add steak
- Steak:
- 1/4 cup packed dark brown sugar
- 1/4 cup minced green onions
- 1/4 cup bourbon
- 1/4 cup low-sodium soy sauce
- 1/4 cup Dijon mustard
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon Worcestershire sauce
- 1 (2-pound) flank steak, trimmed
- Cooking spray
- 1/2 teaspoon cornstarch
- Potatoes:
- 3 pounds small red potatoes
- 6 garlic cloves, peeled
- 1/2 cup reduced-fat sour cream
- 1/3 cup 2% reduced-fat milk
- 2 1/2 tablespoons butter
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup chopped fresh chives
- Garnish:
- 8 fresh chives, cut into 1-inch pieces
Teriyaki Sauce - 1

mix all ingredients together
- 1/2 C Oil
- 1/2 C. Soy Sauce
- 1 tsp ginger root (to 1 cup of mix)
- sprinkle of garlic powder
White Chili - 2

Add all ingredients into a sauce pan, simmer 30 minutes
- 2 lbs Chicken
- 1 Jar Salsa
- 1 Lg Jar White Navy Beans
- 8 oz pkg Montery Jalepeno Jack Cheese
- Cumin
- Chili Powder
Open-Face Grilled Cheese Sandwiches with Pickled Red Onions and Cucumbers

Directions: Preheat a grill to high
- 2/3 cup cider vinegar
- 1/2 small red onion, thinly sliced
- 1/3 cup sugar
- 1 english cucumber, thinly sliced
- 1 cup feta cheese crumbles
- 1/2 cup goat cheese crumbles
- 1/4 cup plus 2 tablespoons extra-virgin olive oil
- 1 baguette, split lengthwise and halved crosswise
- 1 tomato, cored and thinly sliced
- 2 tablespoons chopped fresh parsley
Glazed Sweet Potatoes

- 4 medium yams or sweet potatoes, peeled
- 1/2 cup brown sugar
- 3 tablespoons maple syrup
- Freshly grated nutmeg, to taste
Piccata-Style Fish Fillets with Thin Pasta and Wilted Spinach

Directions: Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente
- Salt and pepper
- 1/2 pound thin egg pasta or angel hair pasta
- 4 thin tilapia or snapper fillets
- Old Bay Seasoning
- 1/2 cup flour
- 1/4 cup cornstarch
- 2 tablespoons extra-virgin olive oil (EVOO)
- 4 tablespoons butter
- 2 large cloves garlic, grated or finely chopped
- 1/2 cup white wine
- 2 lemons
- 1/4 cup drained capers
- A handful flat-leaf parsley, finely chopped
- 3/4 pound fresh spinach, cleaned and trimmed
- A little freshly grated nutmeg
