Chicken Fajita Salad with Poblano-Buttermilk Dressing

Directions: Preheat a grill or grill pan to medium
- Juice of 2 limes
- 2 skinless, boneless chicken breasts (about 1 pound)
- 1/4 cup plus 2 tablespoons extra-virgin olive oil
- Salt and pepper
- 2 poblano chiles, halved and seeded
- 1 sweet onion, thickly sliced
- 1/2 cup buttermilk
- 4 medium flour tortillas
- 1/4 teaspoon cayenne pepper
- 1 large head romaine lettuce,torn into bite-size pieces
Hot Cheese Dip

Mix all ingredients together
- 10 oz mild cheddare cheese, shredded
- 1 medium onion
- 1 pint Mayonaise
- Round load of Sourdough bread
BBQ Sauce - GP

Combine all ingredients together - use to brush on chicken
- 3 Tbls Grated Onion
- 3 Tbls Worshchestershire
- 3 Tbls Lemon Juice
- 3 Tbls water
- 3 Tbls oil
- 3-4 dashes Tabasco
- 1/2 tsp cornstarch
Potato Casserole

- 2 cups mashed potatoes
- 1/2 cup sour cream
- House Seasoning, recipe follows
- 1 small onion, sliced thin
- 1 small bell pepper, sliced thin
- 8 tablespoons (1 stick) butter
- 1 1/2 cups grated Cheddar
- 4 medium potatoes, cooked
- 6 slices bacon, cooked crisp
- 1 cup salt
- 1/4 cup black pepper

Roasted Tomatoes with Shrimp-and-Garlic-Bread Stuffing

- 5 ounces frozen garlic bread
- 8 plum tomatoes, halved lengthwise
- 1/4 cup plus 1 tablespoon extra-virgin olive oil
- Salt and pepper
- 2 tablespoons chopped fresh basil
- 1/2 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1/3 pound frozen cooked bay shrimp, thawed and coarsely chopped
- 1/4 cup grated asiago cheese
Penne with Shrimp and Herbed Cream Sauce

Bring a large pot of salted water to a boil over high heat
- 1 pound penne pasta
- 1/4 cup olive oil
- 1 pound medium shrimp, peeled, and deveined
- 4 cloves garlic, minced
- 1/2 teaspoon kosher salt, plus extra for seasoning
- 1/2 teaspoon freshly ground black pepper, plus extra for seasoning
- 1 (15-ounce) can whole tomatoes, drained, roughly chopped
- 1/2 cup chopped fresh basil leaves
- 1/2 cup chopped fresh flat-leaf parsley
- 1/4 teaspoon crushed red pepper flakes
- 1 cup white wine
- 1/3 cup clam juice
- 3/4 cup heavy whipping cream
- 1/2 cup grated Parmesan
