- 1/4 cup chopped onion
- 2 tablespoons butter
- 2 tablespoons flour
- 1 1/4 cups milk
- 1 cup grated Cheddar cheese
- Salt and pepper
- 3 potatoes, peeled and thinly sliced, not rinsed

- 13 Cups of water
- 1 Cup Salt
- 5 Cups Vinegar

Smoked Mozzarella and Chicken Sandwiches with Italian Barbecue Sauce

Directions: Preheat a grill pan over medium-high heat
- 2 tablespoons extra-virgin olive oil (EVOO), plus more for drizzling
- 1 red onion, finely chopped
- 2 large cloves garlic, finely chopped or grated
- One 14.5-ounce can diced fire-roasted tomatoes
- 1/2 cup chicken stock
- 2 tablespoons balsamic vinegar
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- Salt and pepper
- 4 pieces skinless, boneless chicken breast, each halved horizontally into 2 cutlets
- 12 thin slices smoked mozzarella cheese (1-pound ball)
- 2 cups loosely packed baby arugula
- 1/2 cup basil leaves (10 to 12), shredded or torn
- 1 loaf ciabatta bread, split lengthwise and cut into 4 pieces
Open-Face Chimichurri Skirt Steak Sandwiches

Directions: Preheat the grill to medium
- 2/3 cup extra-virgin olive oil
- 3 cloves garlic, smashed and peeled
- 1 serrano chile, seeded if desired
- 1 packed cup parsley sprigs
- 1 packed cup cilantro sprigs
- Grated peel of 1 lemon and juice of 1/2 lemon
- Salt and pepper
- One 16-ounce loaf ciabatta bread, sliced on an angle into 12 pieces

- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup almonds, finely chopped
- 2 tablespoons chopped fresh parsley leaves
- 1 clove garlic, crushed with press
- 1 teaspoon salt
- 1/4 teaspoon dried thyme
- 1 pinch ground black pepper
- 1/4 cup extra-virgin olive oil
- 2 pounds skinless, boneless chicken-breast halves, pounded to 1/2-inch thickness and cut into pieces

- 2 tablespoons flavored liqueur, such as rum or orange-flavored liqueur
- 1 quart your favorite flavor ice cream, slightly softened
- 1/2 quart sorbet or contrasting flavor ice cream, slightly softened
- 1 (9 by 13-inch) pan brownies
- 4 egg whites, at room temperature

- 1 cup sour cream
- 1/2 cup Mayonaise
- 2 cans refried beans
- 3 avocados mashed with a pinch of salt and lemon juice, or 1 container guacamole dip
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded sharp cheddar cheese
- 1 cup diced tomatoes
- 1/2 cup scallion, green part only, sliced or snipped with scissors
- 2 cups chopped black olives
