Marsala Chicken-and-Mushroom Casserole

Directions: Preheat the oven to 350°
- 2 tablespoons butter
- 10 ounces sliced mushrooms
- 1 1/2 tablespoons flour
- 1/2 cup marsala wine or white wine
- 1/2 cup heavy cream
- 2 tablespoons chopped flat-leaf parsley
- Salt and pepper
- 1 cup long-grain rice
- 2 packed cups coarsely chopped rotisserie chicken
- 2 tablespoons grated parmesan cheese

Mix Crisp X, Cheese Wedges, pretzels, and wheat chex
- 1 Pkg Uncle Dan's Ranch Mix
- 8 C. Crisp X
- 3 C. Cheese Wedge
- 3 C. Pretzels
- 3 C. Wheat Chex's
- 1/4 C. Oil
Tomato Sauce with Shrimp and Feta

Heat 2 Tbls of the oil in a saucepan over medium heat, add garlic and saute about 1 minute
- 4 Tbls Olive Oil
- 1 Tbls Minced Garlic
- 2 Cups Peeled, seeded and chopped ripe tomatoes
- 1/3 C. Dry White Wine
- 1/4 C. Chopped Fresh Basil
- 1 Tsp Dried Oregano
- Salt and freshly ground pepper to taste
- 30 Medium Shrimp
- 1/8 tsp Crushed Dried red pepper
- 1/2 Pouned Feta Cheese, Crumbled
Cheese Ball

Mix all ingredients together and shape into a ball
- 8 oz Cream Cheese
- 1/2 C shredded Sharp Cheddar Cheese
- 3-4 Chopped green onions
- 2 Tbl Mayonaise
- Salt to taste
Clam Dip

Mix all ingredients together with a mixer
- 1 Pkg Cream Cheese
- 1 Pkg "soft" Cream Cheese
- 1 - 2 Cans Minced Clams
- Dash of Worchestershire
- Dash of Lemon Juice
Glazed Sweet Potatoes

Preheat oven to 375 degrees F
- 4 tablespoons butter, plus 1 tablespoon for greasing
- 4 medium yams or sweet potatoes, peeled
- 1/2 cup brown sugar
- 3 tablespoons maple syrup
- Freshly grated nutmeg, to taste
Peanut Butter Cookies

- 1/2 C Butter
- 1 C Peanut Butter
- 1 C Brown Sugar
- 1 Tsp Milk
- 1 Tsp Baking Soda

- 1 C White Sugar
- 2 Eggs Beaten
- 2 C Flour
Chicken, Rice and Mushroom Soup with Lime

- 3 cups white chicken stock, or 1 1/2 cups frozen concentrated plus 1 1/2 cups water
- 3/4 cup cooked white or brown rice
- 1/2 cup shredded cooked chicken
- Salt and pepper to taste
- 10 white mushrooms, wiped clean, trimmed, and sliced thin
- 3 scallions, sliced thin
- 1 egg yolk
- Juice of 1 lime
- Minced fresh herbs, whatever you have around
- AVOCADO, CORN, TOMATO AND TORTILLA SOUP
- 4 cups brown chicken stock, or 2 cups frozen concentrated and 2 cups water
- Salt and pepper to taste
- 1/2 cup frozen corn kernels, or fresh, cut off 1 cob
- 1/2 small red onion, peeled and minced
- 1/2 cup shredded chicken
- Juice of 1 lime
- 1 medium ripe avocado, peeled and sliced
- 2 Roma tomatoes, cored and cut into chunks
- 2 tablespoons whole cilantro leaves
- 10 tortilla chips
