CONGO SQUARES

My mother made these every year around the holidays
- 2 3/4 cups all-purpose flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2/3 cup margarine
- 1 (16 oz.) box light brown sugar
- 3 eggs
- 1 tsp. vanilla extract
- 1 cup chopped nuts
- 1 6-oz. pkg. semisweet chocolate chips
PARMESAN FRITTATA

A wonderful breakfast frittata that has it all - bacon, cheese, potatoes & eggs!
- 2 Tbsp. margarine or butter
- 6 eggs, slightly beaten
- 1 cup chopped cooked potatoes
- 1/2 cup (2 oz.) grated parmesan cheese
- 6 slices crisply cooked bacon, crumbled
- 1/4 cup green onion slices
- 1/4 cup milk
- dash of pepper
CHOCOLATE PISTACHIO CAKE

A very moist Bundt cake that can be dressed up with a chocolate glaze or simply presented sprinkled with confection
- 1 pkg. white or yellow cake mix
- 1 pkg. (3.4 oz.) pkg. instant pistachio pudding mix
- 1/2 cup orange juice
- 1/2 cup water
- 4 eggs
- 1/2 cup vegetable oil
- 3/4 cup chocolate-flavored syrup
TWIN SISTERS VEGETABLE SOUP

A hearty, satisfying vegetable soup
- 2 Tbsp. canola oil
- 1 medium red onion, chopped
- 2 small cloves garlic, peeled & minced
- 2 tsp. crushed dried oregano
- 2 medium potatoes, peeled & diced
- 1 small zucchini, peeled & diced
- 1 large yellow squash, diced
- 3 stalks celery, chopped
- 2 large carrots, trimmed & chopped
- 2 bay leaves
- 1 (16-oz.) can crushed tomatoes
- 1 (16-oz.) can kidney beans, rinsed & drained
PUMPKIN PANCAKES

Great for a fall morning! Good way to use leftover canned pumpkin, too
- 1 1/4 cup all-purpose flou
- 2 Tbsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. salt
- 1/8 tsp. nutmeg
- pinch ground cloves
- 1 egg
- 6 Tbsp. pumpkin puree
- 2 Tbsp. melted butter
- 1 cup milk
PAPRIKA CHICKEN

A rich, wonderful chicken dish with which to impress company! Serve with noodles or other pasta
- 6 chicken breasts, skinned & boned
- 3/4 - 1 cup flour seasoned with salt & pepper
- 4 Tbsp. butter
- 1/2 cup finely chopped onion
- 1 cup sliced fresh mushrooms
- 1 Tbsp. paprika
- 2 Tbsp. dry sherry
- 1 1/2 cups sour cream
- 1/4 cup water
- 1 Tbsp. all-purpose flour
STRAWBERRY VANILLA PUDDING DESSERT

A lovely combination of angel food cake cubes, strawberries and vanilla pudding prepared with ice cream
- 4 1/2 to 5 cups (6 oz.) angel cake cubes
- 1 (3.4 oz.) pkg. instant vanilla pudding mix
- 1 cup cold milk
- 1 pint vanilla ice cream, softened
- 1 (3-oz.) pkg. strawberry-flavored gelatin
- 1 1/2 cups boiling water
- 1 10-oz. pkg. frozen strawberry slices
PARTYTIME BEANS

Delicious baked beans cooked in the slow cooker
- 1 1/2 cups ketchup
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 medium red pepper, chopped
- 1/2 cup water
- 1/2 cup packed brown sugar
- 2 bay leaves
- 2-3 tsp. cider vinegar
- 1 tsp. ground mustard
- 1/8 tsp. pepper
- 1 can (16 oz.) kidney beans, rinsed & drained
- 1 can (15.5 oz.) great northern beans, rinsed & drained
- 1 can (15 oz.) lima beans, rinsed & drained
- 1 can (15 oz.) black beans, rinsed & drained
- 1 can (15.5 oz.) black-eyed peas, rinsed & drained
TARTARE SAUCE

So much better than store-bought tartare sauce!
- 2 cups mayonnaise
- 1/4 cup sweet pickle relish
- 1 tsp. finely chopped fresh parsley
- 1 Tbsp. chopped pimentos
- 1 Tbsp. finely chopped onion
- 1 1/2 tsp. Dijon mustard
GOLDEN VINAIGRETTE

A nice vinaigrette dressing made with Dijon mustard
- 2 Tbsp. Dijon mustard
- 1 Tbsp. honey
- 2 1/2 Tbsp. lemon juice (1/2 lemon)
- 1/2 tsp. coarse salt or 1/4 tsp. table salt
- 1/2 cup olive oil
- Pepper as desired
