CREAMY CHICKEN BREASTS

This recipe makes a very nice entree for company, especially when served with some cranberry sauce on the side
- 4 chicken breasts, split & deboned
- 4 slices Swiss cheese
- 1 can cream of chicken soup
- 1/4 cup white wine
- 2 cups crushed Pepperidge Farm herb stuffing mix
- 1/2 cup melted butter
CINNAMON PUMPKIN FLAN

A wonderful dessert anytime but particularly appropriate for fall gatherings
- 1 1/2 cups plus 1 Tbsp. sugar
- pinch of salt
- 1 tsp. cinnamon
- 1 cup pureed cooked pumpkin
- 5 large eggs, lightly beaten
- 1 1/2 cups evaporated milk
- 1/3 cup water
- 1 1/2 tsp. vanilla extract
- 1/2 cup heavy cream, whipped
- 1/4 tsp. ground ginger
DAD'S HOLIDAY CHEESE BALLS

My Dad made these for friends every year at Christmas
- 8 oz. cream cheese
- 8 oz. port wine cheese
- 4 oz. Underwood deviled ham
- chopped pecans
MOLASSES CRINKLES COOKIES

A wonderful molasses cookie with a crinkled top! My grandmother kept these on hand for visiting grandchildren
- 3/4 cup soft shortening
- 1 cup brown sugar
- 1 egg
- 1/4 cup molasses
- 2 1/4 cups all-purpose flour
- 2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 tsp. ground cloves
- 1 tsp. cinnamon
- 1 tsp. ginger
MALLOW DATE ROLL

My maternal grandmother made this every Christmas and served it with whipped cream - delicious!
- 3 cups graham cracker crumbs
- 1 1/2 cups finely chopped pitted dates
- 1 cup chopped walnuts
- 4 cups miniature marshmallows
- 1 cup crushed pineapple with syrup
- 1/2 cup heavy cream
BANANA CARROT MUFFINS

Almost as good as carrot cake!
- 3 medium carrots
- 2 medium bananas
- 1/4 cup margarine
- 1/2 cup brown sugar
- 1 large egg
- 2 cups whole wheat flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1 tsp. vanilla
- 1/2 cup chopped walnuts
GREEN SALAD WITH NUTS & SEEDS

1. Prepare dressing. Combine lemon juice, vinegar, mustard and salt in a jar
- Salad:
- 2 hearts of romaine (9 oz. total), torn into bite-size pieces, about 4 cups
- 1 1/2 oz. feta cheese, crumbled
- 1 cup cherry tomatoes, halved
- 1/2 cup walnut halves, toasted and roughly chopped
- 1/4 cup unsalted, dry-roasted sunflower seeds
- 1/4 cup pine nuts, toasted
- Dressing:
- 2 Tbsp. lemon juice
- 1 Tbsp. balsamic vinegar
- 1 tsp. prepared mustard
- 1/2 tsp. salt
- 2 Tbsp. olive oil
- 1 Tbsp. orange juice
- 1/8 tsp. freshly ground black pepper
FROZEN PEANUT BUTTER PIE

- 1 graham cracker crust or 1 oreo crust
- 8 oz. cream cheese, softened
- 1/2 cup peanut butter
- 1 cup powdered sugar
- 1/2 cup milk
- 10 oz. whipped topping
- Chopped nuts
CREAM BISCUITS

- 2 cups cake or all-purpose flour
- 1 Tbsp. double-acting baking powder
- 1/2 tsp. salt
- 3 Tbsp. minced fresh dill (optional)
- 1 1/4 cups heavy cream, plus additional for brushing biscuits
SILVER WHITE CAKE

- 2 1/4 cups sifted cake flour
- 1 1/2 cups sugar
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1/2 cup soft shortening
- 1 cup milk
- 1 tsp. vanilla or other flavoring as desired
- 4 egg whites (1/2 - 2/3 cup), unbeaten
