SCALLOPED NEW POTATOES & LEEKS

A great side dish for the holidays or for company! Worth the effort!
- 1/4 cup plus 2 Tbsp. butter or margarine, divided
- 1/4 cup all-purpose flour
- 2 cups half 'n half
- 1 Tbsp. Dijon mustard
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1 1/2 cups sliced leeks
- 1/2 cup chopped red pepper
- 5 cups thinly sliced new potatoes
- 2 cups (8 oz.) shredded sharp cheddar cheese
Blueberry Romaine Salad

A wonderful salad featuring a unique mix of blueberries, cashews and Swiss cheese
- Salad: 1 (10-oz.) pkg. hearts of romaine salad mix
- 1 cup unsalted cashews, chopped roughly
- 1 cup shredded Swiss cheese
- 1 cup fresh blueberries
- Dressing: 1/3 cup white vinegar
- 1/4 cup sugar (or less, to your taste)
- 1 Tbsp. chopped red onion
- 2 tsp. poppy seeds
- 1 tsp. ground mustard
- 1/2 tsp. salt
- 1/4 tsp. pepper
- Dash Worcestershire sauce
- 1 cup olive or grapeseed oil
MINESTRONE SOUP

A nice hearty soup, great with Parmesan cheese sprinkled on top!
- 3 cups water
- 2 cups vegetable broth
- 2 cups chopped tomatoes
- 1 cup sliced carrots
- 1 cup sliced celery
- 3/4 cup chopped onions
- 3 Tbsp. red wine
- 1/2 tsp. dried oregano
- 1 clove garlic, minced
- 1/2 tsp. salt or to taste
- 1/4 tsp. pepper
- 2 cups sliced zucchini
- 1 cup diced, peeled potatoes
- 1 1/2 cups cooked kidney beans
- 1/4 cup chopped fresh parsley
- 3 Tbsp. small shells or other pasta
BANANA HOTCAKES

- Honey Pecan Butter:
- 1/2 cup butter, softened
- 1/4 cup honey
- 1/3 cup chopped pecans, toasted
- Hotcakes:
- 1 cup all-purpose flour
- 2 Tbsp. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/8 tsp. ground cinnamon
- 1 egg
- 1 cup milk
- 1 cup mashed banana (about 2 medium)
- 3 Tbsp. vegetable oil
- 2 tsp. lemon juice
- Maple Syrup (optional)
LEMONY BAKED FISH

- 1 lb. fish fillets
- 1/2 tsp. salt
- Pepper to taste
- 3 Tbsp. butter
- 1 1/2 Tbsp. lemon juice
- 1/4 cup dry seasoned bread crumbs
- 1 tsp. sesame seeds
GREEK SALAD

Classic Greek salad with a salad dressing that can be used on any salad
- Salad:
- 2-3 cups torn assorted salad greens
- 4 small ripe tomatoes, cored and cut into wedges
- 1 large cucumber, peeled, seeded & cut into wedges
- 1 red (Spanish) onion, thinly sliced into rings
- 2 small green bell peppers (capsicums), seeded, deribbed & thinly sliced crosswise into rings
- 1/2 lb. feta cheese, coarsely crumbled
- 20 Kalamata olives
- Dressing:
- 1/2 cup olive oil
- 2-3 Tbsp. fresh lemon juice
- 3 Tbsp. dried oregano
- Freshly cracked pepper
- 1 clove garlic, finely minced
VEGETARIAN CHILI

An excellent meatless chili!
- 2 1/2 cups raw kidney beans
- 1 cup raw bulgur
- 1 cup tomato juice
- 4 cloves crushed garlic
- 1 1/2 cups chopped onion
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 cup chopped green peppers
- 2 cups chopped, fresh tomatoes
- Juice of 1/2 lemon
- 1 tsp. ground cumin
- 1 tsp. basil
- 1 tsp. chili powder
- salt & pepper
- 3 Tbsp. tomato paste
- 3 Tbsp. dry red wine
- dash of caye
- olive oil for saute (about 3 Tbsp.)
SWEET 'N SOUR VEGETABLE SALAD

A salad of mixed vegetables combined with a boiled dressing
- 1 (14.5 oz.) can green peas, drained
- 2 (14.5 oz.) cans French-style green beans, drained
- 2 (11-oz.) cans shoe peg corn, drained
- 1 small can chopped pimentos, crained
- 1 small green pepper, finely diced
- 1 cup green onions & stems, diced
- 1 cup celery, diced
- 1 tsp. salt
- 1 Tbsp. water
- 3/4 cup white vinegar
- 1 tsp. black pepper
- 1/2 cup salad oil
- 1 cup sugar
SUNNY VEGETABLE SALAD

Great combination of broccoli, cauliflower, cheese, onion and raisins
- 5 cups broccoli florets
- 5 cups cauliflower florets
- 2 cups (8 oz.) shredded cheddar cheese
- 2/3 cup chopped onion
- 1/2 cup raisins
- 1 cup mayonnaise
- 1/2 cup sugar
- 2 Tbsp. cider or red wine vinegar
- 6 bacon strips, cooked & crumbled
- 1/4 cup sunflower seeds
ARROZ CON POLLO

A delicious version of a Spanish classic!
- 1 whole chicken, cut into 8 pieces or 8 chicken breasts (or your favorite chicken pieces)
- 1/2 cup olive oil
- salt & pepper to taste
- 4 garlic cloves, finely minced
- 1 medium onion, diced
- 2 celery stalks, chopped
- 1 cup long grain rice
- 1/2 cup small, pitted green olives
- 1/4 cup drained capers
- 1 15-oz. can diced or crushed tomatoes
- 1 bell pepper, chopped
- 3/4 cup green peas
- Water
