BROCCOLI SALAD

A nice vegetable salad to enhance any meal
- Salad:
- 2 bunches broccoli, chopped
- 1 cup raisins
- 1 cup chopped pecans (or slivered or sliced almonds)
- 8 slices bacon, cooked & crumbled
- 4 spring onions, chopped
- 2 cups cheddar cheese, grated
- 1/2 cup sunflower seeds
- Dressing:
- 1 cup mayonnaise
- 2 Tbsp. vinegar
- 1/2 cup sugar
BAKED ZITI

- 1 lb. ziti
- 1 lb. ricotta cheese
- 8 oz. shredded mozzarella cheese
- 1 1-lb. 10 oz. jar Prego spaghetti sauce (or your favorite brand)
SUMMER SQUASH CASSEROLE

A delicious way to use yellow squash!
- 2 cups steamed, sliced squash
- 3/4 stick butter or margarine, melted
- 2 eggs
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 cup chopped onion
- 1 cup grated cheese (Monterey Jack is good)
- 1/2 cup plain yogurt
- 1/2 cup milk
- 2 cups cracker crumbs (Pepperidge Farm stuffing is good)
CHICKEN TORTILLA SOUP

- 4 chicken breasts
- 2 (15-oz.) cans black beans, undrained
- 2 (15-oz.) cans Mexican stewed tomatoes or Rotel tomatoes
- 1 cup salsa (milk, medium, or hot - your preference)
- 1 (4-oz.) can chopped green chiles
- 1 (14 1/2 oz.) can tomato sauce
- Tortilla Chips
- 2 cups grated cheese

- 1 (8 oz.) can crushed pineapple
- 1/2 cup all-purpose flour
- 1/3 cup firmly packed brown sugar
- 1/4 tsp. ground cinnamon
- 1/2 cup margarine, melted and divided
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 1 egg, beaten
- 3/4 cup milk
HEARTY BEEF STEW

A wonderful, hearty and flavorful beef stew, especially nice in cold weather!
- 5 lbs. boneless beef chuck-eye roast, trimmed & cut into 1 1/2" cubes
- salt & pepper
- 3 Tbsp. vegetable oil
- 4 medium onions, chopped ine
- 1 6-oz. can tomato paste
- 2 cups low sodium beef broth
- 3 Tbsp. soy sauce
- 1 lb. carrots, peeled & cut into 1-inch pieces
- 1 lb. red potatoes, cut into 1-inch pieces
- 1 1/2 tsp. minced fresh thyme
- 2 bay leaves
- 2 Tbsp. Minute Tapioca
- 2 cups frozen peas, thawed
