FRESH ASPARAGUS WITH PECANS

Wonderful chilled asparagus salad
- 1 lb. fresh asparagus, trimmed
- 1/4 cup cider vinegar
- 1/4 cup reduced-sodium soy sauce
- 2 Tbsp. sugar
- 2 Tbsp. olive oil
- 3 Tbsp. chopped pecans, toasted
CRUNCHY TOSSED SALAD

A nice alternative to the standard "tossed" salad
- 1/2 cup vegetable oil
- 1/4 cup sugar
- 2 Tbsp. vinegar
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 large head iceberg lettuce, sliced
- 6 bacon strips, cooked & crumbled
- 1/3 cup sliced almonds, toasted
- 1/4 cup sesame seeds, toasted
- 4 green onions, sliced
- 3/4 cup chow mein noodles
SUCCOTASH CHOWDER

This soup is really delicious when made with fresh corn in season
- 1 medium potato, average sized, diced
- 1 Tbsp. butter
- 2 cups chopped onion
- 3-4 medium cloves garlic, crushed or minced
- 3 stalks celery, minced
- 1 1/2 tsp. salt
- 1 tsp. basil
- 1/2 tsp. thyme
- 3 cups corn (fresh, or a 1-lb. bag frozen, defrosted)
- 2-3 cups cooked baby lima beans
- 4 cups milk (can be low fat)
- a generous amount of fresh black pepper
- finely minced parsley and/or chives (optional)
FABULOUS FRENCH TOAST

The sugar on the outside of the bread carmelizes to form a very delicious French toast
- 6 Tbsp. granulated sugar
- 2 tsp. ground cinnamon, divided
- 2 eggs
- 2/3 cup milk
- 1/4 tsp. sugar
- 1 1/2 tsp. vanilla extract
- 4 slices bread
- Maple syrup or powdered sugar for serving
- Optional: 1 cup cubed fresh fruit for topping
CREAM CHEESE FLAN

A wonderfully smooth and creamy flan!
- 3/4 cup granulated sugar
- 1 can (12-oz.) evaporated milk
- 1 can (14-oz.) sweetened condensed milk
- 1 pkg. (8-oz.) cream cheese, softened
- 5 large eggs
- 1 tsp. vanilla extract
BUTTERMILK POTATO SALAD

An interesting variation of classic potato salad!
- 2 lbs. red potatoes
- 1/3 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup buttermilk
- 1/4 cup chopped fresh chives
- 2 Tbsp. minced fresh dill
- 1 Tbsp. minced fresh parsley
- 1 tsp. sugar
- Tabasco to taste
- 1 cup frozen green peas, thawed
- Salt to taste
SOYA MUFFINS

My grandmother used to make these for my grandfather who was always interested in pursuing healthy food
- 1 cup soy flour
- 1/2 cup oat flour or 1 cup whole wheat flour
- 1 tsp. salt
- 1 Tbsp. baking powder
- 3 Tbsp. brown sugar
- 2 eggs
- 1/4 cup safflower oil (may use other oils)
- 1 1/2 cups milk
CHOCOLATE CHIP OATMEAL COOKIES

My mother made these cookies at Christmas each year
- 1 cup Crisco shortening
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 1 1/4 cup sifted all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. vanilla
- 3 cups rolled oats
- 1 cup chopped pecans
- 1 6-oz. pkg. chocolate chips
CHICKEN PARMESAN

- 1/2 cup fine, dry breadcrumbs
- 1/4 cup grated Parmesan cheese
- 4 chicken breasts, skinless and boneless
- 1 egg, beaten
- 3 Tbsp. butter or margarine
- 1 green pepper, thinly sliced
- 1 8-oz. can tomato sauce
- 1/2 cup water
- 1/4 tsp. dried oregano
- 1 cup (4 oz.) shredded Mozzarella cheese
