BLUEBERRY MUFFINS

Lemon extract imparts a unique flavor to blueberry muffins
- 1 1/2 cups all-purpose flour
- 2/3 cup sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 egg
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 cup blueberries
- 1 tsp. lemon extract
SEVEN MINUTE BOILED FROSTING

A wonderful meringue-like frosting which can be the beginning of a coconut cake
- 2 egg whites (1/4 cup)
- 1 1/2 cups sugar
- 1/4 tsp. cream of tartar -OR- 1 Tbsp. light corn syrup
- 1/3 cup water
- 1 tsp. vanilla

- 3/4 cup plus 1 Tbsp. water
- 1/4 cup sugar
- 1 Tbsp. lemon juice

PEANUT BUTTER FUDGE

- 6 cups sugar
- 1 large can evaporated milk
- 2 sticks of butter or margarine
- 1 7-oz. jar marshmallow creme
- 1 12-oz. jar creamy peanut butter
COCA COLA CAKE

Simple to prepare, easy to slice and convenient to freeze but don't count on any leftovers!
- Cake:
- 1 cup Coca Cola
- 1/2 cup buttermilk
- 1 cup butter or margarine, softened
- 1 3/4 cups sugar
- 2 large eggs, lightly beaten
- 2 tsp. vanilla extract
- 1/4 cup cocoa
- 1 tsp. baking soda
- 1 1/2 cups miniature marshmallows
- Frosting:
- 1/2 cup butter or margarine
- 1/3 cup Coca Cola
- 3 Tbsp. cocoa
- 1 16-oz. pkg. powdered sugar
- 1 Tbsp. vanilla extract
- Garnish: 3/4 cup chopped pecans, toasted
CRANBERRY COFFEE CAKE

A delicious coffee cake with a swirl of cranberry!
- 1/4 lb. (1 stick) butter or margarine
- 1 cup sugar
- 2 eggs
- 1 tsp. baking soda
- 2 cups all-purpose flour
- 1/2 tsp. salt
- 1 cup (1/2 pint) sour cream
- 1 tsp. almond extract (or vanilla if almond unavailable)
- 1 8-oz. can whole cranberry sauce
- 1/2 cup chopped nuts
BULGUR VEGGIE BURGERS WITH LIME MAYONNAISE

Delicious meatless burgers accented with lime mayo
- 1/2 cup chopped onion, divided
- 1 Tbsp. olive oil plus additional for brushing
- 1/2 cup bulgur
- 1 cup water
- 1 cup canned pinto beans, rinsed and drained
- 1 1/2 Tbsp. soy sauce
- 3/4 cup walnuts (2.5 oz.)
- 2 garlic cloves, coarsely chopped
- 1/2 cup packed cilantro sprigs
- 3/4 tsp. ground cumin
- 1/4 tsp. cayenne
- 1/4 cup mayonnaise
- 1/4 tsp. grated lime zest
- 1/2 tsp. fresh lime juice
- 4 slices multi-grain bread, toasted
- Lettuce, tomato slices as accompaniments
STRAWBERRY SALAD WITH PECANS & FETA CHEESE

A wonderful spring salad when strawberries are in season!
- 3 Tbsp. white wine vinegar
- 2 Tbsp. extra-virgin olive oil
- 1 Tbsp. sugar
- Kosher salt & pepper
- 1 quart strawberries, hulled & halved
- 6 cups spring mix salad greens
- 1/2 cup pecans, toasted & chopped
- 1/4 cup crumbled feta cheese
- 1 Tbsp. chopped fresh dill or 1/2 tsp. dried dill
BUTTERSCOTCH BROWNIES
