Lightly butter a 9x13 baking dish
- 4 cups whole or low-fat milk
- 1 cup semolina flour
- 3/4 tsp sea salt
- 1/8 tsp fresh grated nutmeg
- 1 large egg
- 1 tbsp unsalted butter, plus 2 tbsps, melted
- 1 cup fresh grated pecorino sardo
- fresh ground white pepper
- fresh chopped basil leaves
- sliced cherry tomatoes
Spaghetti Pie

- 2 cups cooked whole wheat spaghetti
- 1 oz. grated reduced fat parm cheese
- 1 egg, beaten
- 2/3 cup fat-free ricotta
- 1 Tbsp butter
- 1/3 cup skim mozzarella cheese
- 1/2 onion, chopped
- 1/2 bell pepper, chopped
- 1 clove of garlic, minced
- 1 cup canned whole tomatoes (drained and chopped)

Braised Short Ribs

- 8 whole Beef Short Ribs
- Kosher Salt & Pepper To Taste
- ¼ cups All-purpose Flour
- 6 pieces Pancetta, Diced
- 2 Tablespoons Olive Oil
- 1 whole Medium Onion, Diced
- 3 whole Carrots, Diced
- 2 whole Shallots, Peeled And Finely Minced

- 2 cups Beef Or Chicken Broth (enough To Almost Cover Ribs)

Butternut Squash & Sausage Soup

- 1 large butternut squash, about 3 pounds, halved, seeds removed
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt

- 1/2 pound sweet Italian sausage, removed from casings
- 1 large onion, chopped
- 6 cloves garlic, minced
- 1 tablespoon chopped fresh sage, plus 12 whole leaves

- 6 cups light chicken stock or broth
- 1 teaspoon cider vinegar or lemon juice
- 1/2 cup heavy cream, or more to taste
- 2 tablespoons butter
Lobster Mac & Cheese

Preheat the oven to 375 degrees
- Kosher salt
- Vegetable oil
- 1 lb elbow macaroni
- 1 quart milk
- 8 tbsp (1 stock) unsalted butter, divided
- ½ cup all purpose flour
- 12 oz Gruyere cheese, grated (4 cups)
- 8 oz extra sharp Cheddar, grated (2 cups)
- ½ tsp fresh ground pepper
- ½ tsp nutmeg
- 1 ½ lbs cooked lobster meat
- 1 ½ cups fresh white bread crumbs (5 slices, crusts removed)
Moroccan Beef Stew
