Pasta Pomodoro

Pairs perfectly with Iclcle Ridge 2008 Sangiovese wine
- 2 (8 oz) packages spaghettini
- 1/4 Cup extra virgin olive oil (plus more for drizzling)
- 1/4 onion, chopped (or 2 shallots, chopped)
- 1/4 tsp red pepper flakes
- 4 cloves garlic, minced
- 1 pint small cherry tomatoes, stems removed, crushed
- 1 (10.75 oz) can chicken broth
- freshly ground black pepper to taste
- 1/2 Cup chopped fresh basil
- 1/4 Cup grated Parmesan cheese
Mediterranean Pasta

Place tomatoes in large saucepan with boiling water to cover, 60 seconds to loosen skins
- 1 1/2 lbs tomatoes (about 4-5 large ones)
- 12 green olives
- 8 anchovy fillets
- 2 md garlic
- 1 lb spaghetti, uncooked
- boiling salted water
- 1/2 cup olive oil
- 1 cup parsley (fresh); chopped
- 2 Tbs capers (optional); drained
- 4 tsp basil (fresh), or; chopped
- 1 tsp dried basil; crumbled
- 1 tsp dried oregano; crumbled
- 1 tsp dried red pepper flakes
- 1 tsp salt
Vinaigrette

Classic vinaigrette starts with 1 part vinegar to 3 parts oil, but this ratio can be adjusted to taste
- 1/4 cup vinegar or citrus juice
- 2 teaspoons mustard
- 1 teaspoon sugar or 2 teaspoons honey
- 3/4 cup oil
- Various other ingredients (see variations below)
- Salt and pepper

In a large bowl, pour boiling water over butter
- COOKIE
- 1/4 cup water; boiling
- 1/2 cup butter
- 1/2 cup brown sugar
- 3 cup all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 tsp ground ginger
- ICING
- 2 1/4 cup confectioners' sugar; sifted
