Dill Pickles

cups vinegar 3/4 cups pickling salt 7 cups water Heat in pan but do not boil

- 50 lb cukes
- 1 1/2 ga cider vinegar
- 1 1/2 bags pickling salt
- 8 heads garlic
- 2-3 bn dill
- Brine for 8 jars
Pomodoro Sauce

In a saucepan over medium heat, saute garlic and onion in oil for 2 minutes
- 2 garlic cloves, minced
- 2 tbsp. onion, diced
- 2 tbsp. olive oil
- 2 tomatoes, chopped
- 3 tbsp. fresh herbs (oregano, basil, parsley), chopped
- salt and pepper to taste
- pinch of sugar
Caffe Medici

Divide the chocolate syrup, sugar, and orange peel into 4 coffee mugs
- 1/2 cup chocolate syrup
- 4 Tbs Sugar
- 4 piece orange peel; cut into strips (1-inch)
- 24 oz espresso coffee
- cocoa powder; garnish
- bittersweet chocolate grated
Cajun Spice Mix

This is a mildly hot Cajun spice mix you make yourself with common spices from your pantry
- 2 teaspoons salt
- 2 teaspoons garlic powder
- 2 1/2 teaspoons paprika
- 1 teaspoon ground black pepper
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper
- 1 1/4 teaspoons dried oregano
- 1 1/4 teaspoons dried thyme
- 1/2 teaspoon red pepper flakes (optional)
Fried Rice

This is a basic recipe for fried rice that you can add to as desired
- 2 green onions, finely chopped
- 2 large eggs
- 1 teaspoon salt
- Pepper to taste
- 3 Tablespoons oil for stir-frying, or as needed
- 4 cups previously cooked rice, at least 1 day old (2-3 days is better)
- 1 – 2 Tablespoons light soy sauce or oyster sauce as desired
Hot Galleano Sauce

Boil sugar, whipping cream and butter for 3-5 minutes
- 1 cup sugar
- 1 cup whipping cream
- 1/4 cup butter or margarine
- 1/2 cup galleano liqueur
Hot Artichoke Spinach Dip

1. Preheat oven to 350 degrees F (175 degrees C)
- 1 (14 ounce) can artichoke hearts, drained
- 1/3 cup grated Romano cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon minced garlic
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 1/3 cup heavy cream
- 1/2 cup sour cream
- 1 cup shredded Mozzarella cheese

Baby Back Ribs Dry Rub

- 8 Tbs light brown sugar; tightly packed

- 1 Tbs chili powder
