Cliff's Famous Sausage Balls

Great any time of year?
- 2-8 0z. blocks of sharp cheddar cheese
- 2-1 pound packs of your favorite sausage
- 2 c. Heart Healthy Bisquick
- 1 package of Red Lobster Cheddar Cheese Biscuit mix (available at Walmart
- Preheat oven to 325 degrees.
- Cut the cheese blocks in two halves and put into microwave safe bowl. Pour in 1/2 c. milk and microwave 3 min. Stir and return to microwave for another 2 1/2 to 3 min. Set out and let cool.
- Pour all the Bisquick and Red Lobster mix in a large bowl and add the sausage. When the cheese mixture is cool enough to not burn your hands, pour it into the mixing bowl.
- With your hands, knead all ingredients together into a large round loaf. When mixed, pinch off a small portion and roll into a small ball (a little smaller than a Ping-Pong ball)
Peanut Butter Bars Recipe

In a large bowl, cream the butter, sugars and peanut butter until light and fluffy
- ICING:
- 1/2 cup butter, softened
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1/2 cup creamy peanut butter
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup King Arthur Unbleached All-Purpose Flour
- 1/2 cup quick-cooking oats
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (6 ounces) semisweet chocolate chips
- 1/2 cup confectioners' sugar
- 2 tablespoons creamy peanut butter
- 2 tablespoons milk
Pecan Toffee Fudge Recipe

Line a 9-in. square pan with foil and grease the foil with butter; set aside
- 1 teaspoon butter
- 1 package (8 ounces) cream cheese, softened
- 3-3/4 cups confectioners' sugar
- 6 ounces unsweetened chocolate, melted and cooled
- 1/4 teaspoon almond extract
- Dash salt
- 1/4 cup coarsely chopped pecans
- 1/4 cup English toffee bits

- 4 c. shelled pecans
- 1 pound candied cherries
- 1 pound candied pineapple
- 1 3/4 c. flour

Baked Crunchy Chicken Recipe

In a shallow bowl, whisk egg and milk
- 1 egg
- 1 tablespoon milk
- 1 can (2.8 ounces) french-fried onions, crushed
- 3/4 cup grated Parmesan cheese
- 1/4 cup dry bread crumbs
- 1 teaspoon paprika
- 1/2 teaspoon salt
- Dash pepper
- 1 broiler/fryer chicken (3 to 4 pounds), cut up
- 1/4 cup butter, melted
Sweet Hawaiian Chicken

- 2 pounds chicken tenderloin chunks

Christmas Clam Chowder

I substitute broccoli for the potatoes and clams at times and it's very good
- 4 c. cubed red potatoes
- 3 c. water
- 1 medium carrot, grated
- 1 small onion, chopped
- 2 tsp chicken bouillon granules
- 1 tsp dried Parsley flakes
- 1/2 tsp pepper
- 2 tbsp flour
- 1/2 c. cold water
- 3 cans (6 1/2oz) each chopped clams, drained
- 2/3 c. cubed Velveeta cheese
- 1 can (12oz) evaporated milk
BLT Macaroni Salad Recipe

In a large bowl, combine the first four ingredients
- 1/2 cup mayonnaise
- 3 tablespoons chili sauce
- 2 tablespoons lemon juice
- 1 teaspoon sugar
- 3 cups cooked elbow macaroni
- 1/2 cup chopped seeded tomato
- 2 tablespoons chopped green onions
- 3 cups shredded lettuce
- 4 bacon strips, cooked and crumbled

- 1 Jar (24 oz) speg. sauce
- 2 C. cottage cheese(small curd)
