TOM KA GAl (Lemongrass and Coconut Soup)

In a large stockpot, heat together the broth, lime leaves, lemongrass, galangal, fish sauce and lime juice
- 6 cups chicken broth
- 10 kafftr lime leaves, very thinly sliced
- 6 ( 2 inch) pieces lemongrass
- 4 slices galangal
- 8 Tbsp fish sauce
- 4 Tbsp fresh lime juice
- 3/4 pound chicken breast, thinly sliced or cubed
- 2 cans( 15 ounce) coconut milk
- sliced chili peppers as desired
- cilantro leaves for garnish
Flourless Chocolate Cake

Preheat oven to 350. Butter sides and bottom of 9" spring-form pan, line bottom with parchment or waxed paper
- 1 lb. Semisweet chocolate chips
- 2 sticks unsalted butter
- 1/4 cup coffee liquer
- 1 tsp Vanilla extract
- 7 large eggs, at room temperature
- 1 cup sugar
- Powdered sugar
White Magic Cake

- 2 c. flour
- 1 1/3 c. sugar
- 1/2 c. Crisco
- 1 tsp salt
- 2/3 c. milk
- Beat for 2 min.

- 3 1/2 tsp baking powder
- 4 eggs whites, unbeaten
- 1/3 c. milk
- 1 tsp vanilla
- Beat 2 mins more.
STIR FRIED BROCCOLI AND RED PEPPERS WITH PEANUT SAUCE

- 1 Tbsp fresh lime juice

- 1/8 tsp red pepper flakes
- 3/4 cup coconut milk
- 1/4 cup water
- 3 Tbsp smooth peanut butter
- 1 Tbsp plus 1 tsp peanut oil
- 1 red pepper, cut into strips
- 1 pound broccoli, cut into florets
- 2 garlic cloves, minced
- 1 tsp grated ginger
7 Minute Mocha Frosting

Place in double boiler & beat with rotary beater for 7 minutes until frosting holds its shape

- 1/2 c. light corn syrup
- 2 egg whites
- 3 Tbsp strong coffee

RED CURRY WITH CHICKEN

- 1 c. boiling water
- 3 tsp lemon juice
- 8 oz cream cheese

Curried Beef Samosas with Mango-Papaya Chutney

- 1 pound lean ground beef
- 2 tablespoons curry powder
- 1 teaspoon all purpose flour
- 36 wonton wrappers
- 1 large egg (beaten to blend) Vegetable oil (for deep-frying)
