Chocolate Potato Cake

Bake at 300 for 1 1/2 hours
- 1 c. butter
- 2 c. sugar
- 1 c. mashed potatoes
- 2 oz melted chocolate
- 2 cups flour
- 1 tsp baking soda
- 2 tsp cream of tarter
- 1/2 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- 1 cup dates
- 1 cup nuts
- ** Frosting **
- 1 package cream cheese
- 2 oz chocolate (melted)
- 2 c. powder sugar
- 2 or 3 Tbsp milk

Soften yeast in warm water
- 2 cakes yeast
- 1/2 cup lukewarm water
- 1 cup milk
- 1/4 c. shortening
- 1/2 cup sugar
- 1 tsp salt
- 2 eggs (beaten)
- 5 1/2 to 6 cups flour (regular not Wondra)
Sour Cream Banana Coffee Cake

1. In a small mixing bowl, cream butter and 6 tablespoons sugar
- 1/4 cup butter or margarine, softened 8 tablespoons sugar, divided
- 1 egg
- 1/4 teaspoon vanilla extract
- 1/2 cup mashed ripe banana
- 1/4 cup sour cream
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/8 teaspoon salt
- 1/4 cup chopped walnuts
- 1/4 teaspoon ground cinnamon
Graham Cracker Cake

Blend first 4 ingredients
- 2 Tbsp Butter
- 1/3 c. shortening
- 1/2 tsp salt
- 1 tsp vanilla
- 3/4 c. sugar
- 2 eggs (separated)
- 2/3 c. flour
- 2 1/2 tsp baking powder
- 1 1/3 c. fine graham cracker crumbs (about 15 crackers)
- 3/4 c. milk
GREEN PAPAYA SALAD

Peel and seed the papaya and shred
- 1 1/2 lb. green papaya
- 2 garlic cloves, sliced
- 3 to 4 red or green chili peppers, seeded
- 2 tomatoes, sliced into strips
- 2 Tbsp. fish sauce
- 4 Tbsp. lime juice
- 1/3 cup dried shrimp
- Lettuce leaves
- limes, cut into wedges
- Garnish: red or green chili peppers
Savory Semolina

Bring 4 cups water to boil in heavy large saucepan over medium-high heat
- 4 cups water
- 2 teaspoons coarse kosher salt
- 1 1/2 cups semolina flour (pasta flour)* or farina (suji or sooji, such as Rani or Ajika brands; about 9 ounces) *
- 1/3 cup clarified butter
- 2 small garlic cloves, minced
- 2 teaspoons minced peeled fresh ginger
- 2 teaspoons finely chopped fresh or frozen curry leaves (about 12 leaves)**
- 1 small serrano chile, minced
- 1 teaspoon black mustard seeds* * *
- 1/2 teaspoon cumin seeds
- 12 cherry tomatoes, halved
- 1 cup fresh or frozen green peas
- 1/3 cup chopped raw cashews
- *Semolina flour is available at some supermarkets and at specialty foods stores and Italian
- markets. Farina can be orderedfrom amazon.com.
- **Also known as kari patta; available at Indian markets.

Flo's Roasted Potato Salad

Preheat the oven to 400 degrees F
- . 2 pounds new potatoes
- . 10 cloves of fresh garlic
- . Drizzle of olive oil
- . Salt
- . Freshly ground black pepper
- . 3/4 cup homemade mayonnaise, or store bought
- . 2 tablespoons Creole Mustard
- . Juice of one fresh lemon
- . 2 tablespoons finely chopped fresh parsley leaves
- . 4 hard-boiled eggs, sliced
- . 1/2 bound bacon, rendered until crispy
- . 1/2 small red onions, thinly sliced
Poppyseed Salad Dressing

Whisk vinegar, mustard, & honey
- 3 Tbsp Apple Cider Vinegar
- 4 tsp Dijon Mustard
- 1 Tbsp Honey
- 3/4 cup Corn Oil
- 1 tsp poppyseeds
Chinese Five Spice Ove-Fried Chicken

1. Heat oven to 450. Fit a large rimmed baking sheet with a wire rack
- 1 1/2 cups panko bread crumbs
- 1 tsp Chinese five spice
- 1 tsp salt
- 1/4 cup honey
- 1 Tbsp lemon juice
- 1 broiler-fryer chicken (about 3 1/2#), cut into 8 pieces, skin removed
