Spice Cake

Beat together for 2 min. Add 1/2 to 2/3 c
- Add:
- 2 c. flour
- 3 1/2 tsp B. Powder
- 1 tsp salt
- 1 1/2 cup sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp clove [ground]
- 1/2 c shortening
- 1 cup milk
- 1 tsp vanilla
Autumn herbed Chicken with Fennel & Squash

Season chicken on all sides with salt & pepper, thne lightly coat with flour
- 3-4 lbs chicken thighs
- Salt & Pepper, to taste
- All-purpose flour, as needed
- 2 Tbsp olive oil
- 1 Fennel bulb, thinly sliced
- 1/2 butternut squash, peeled, seeded,
- & cut into 3/4 inch cubes
- 1 tsp dried thyme
- 3/4 cup walnuts (optional)
- 3/4 cup chicken broth
- 1/2 apple cider or juice
- Cooked rice or pasta
- 1/4 cup fresh basil
- 2 tsp fresh rosemary, finely minced
Maple Appl Bundt Cake with Jack Daniels Glaze

Pre-heat oven to 350˚. Grease and flour Bundt pan
- 1 cup packed brown sugar
- 8 oz butter
- ¾ cup real maple syrup
- 1 tsp maple flavoring
- 5 eggs
- 2 ¼ flour
- 1 ½ tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- 1 apple w/ skin, cored and coarsely grated
- 1 ½ cup coarsely chopped pecans, lightly toasted
- Glaze: 1 Tbsp real maple syrup
- 8 Tbsp powdered sugar
- 1 Tbsp Jack Daniels Whiskey
Poppyseed Coffee Cake (Aunt Angeline's)

Take 3 cups flour & work in shortening like a pie crust
- ** Coffee Cake **
- 5 cups flour
- 1/2 cup shortening
- 2 cups warm water
- 1 tsp salt
- 3/4 cup sugar
- ** Poppyseed filling **
- 1 to 1 1/2 About 1 to 1 1/2 lbs of ground poppyseed
- Enough sugar to taste
- Mix together & spread over dough. (See directions.)
- ** Streusal topping **
- 1 cup sugar
- 1 cup flour
- 1/4 About 1/4 lb butter or more
- Vanilla
- Blend in blender or fingers until crumbly. Put on coffee cake. (See directions.)
Greek Cinnamon Stewed Chicken

Preboil water with sea salt
- . 1 chicken (2 1/2 to 3 pounds), cut into 8 pieces (legs, breast and thighs)
- . 1 tsp. ground cinnamon
- . 2 tsp. kosher salt
- . 1 tsp. freshly ground black pepper
- . 5 cloves garlic, peeled and minced
- . 2 Tbsp. extra-virgin olive oil
- . 1 large yellow onion, peeled and coarsely chopped
- . 2 cups water
- . 1 can (6 ounces) tomato paste
- . 1 Tbsp. dried Italian herb seasoning
- . 1 cup orzo , cooked according to package directions
- . 1/2 cup grated Parmesan cheese
Almond Cake to Die For

Beat butter and sugar in large bowl until fluffy
- 1 cup butter
- 1 cup sugar
- 3 eggs
- 1 jar/can almond filling
- 1 tsp vanilla extract
- 2 ¼ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- ¼ cup milk
- 2 Tbsp orange zest
Pasta Fresca (Fresh egg pasta)

. Make a cone with the flour and flatten the cone at the top to make a well
- As a main meal, with a medium-heavy sauce, calculate 100 g
- (30z) of flour per person. Use 1 egg per 100 g of flour.
- i.e. for 4 people, use 400 g (12 oz) of flour and 4 eggs.
- The best flour to use is durum wheat flour, but plain (all-purpose flour) works fine too.
Coffee Cake

[For the batter, sift all dry ingredients together
- ** For the Topping **
- 3 Tbsp flour
- 1/2 tsp cinnamon
- 1/4 cup sugar
- 2 Tbsp butter or margarine
- For a variation: Omit cinnamon, add 1 Tbsp grated orange rind and 1/4 cup finely chopped walnuts.
- ** For the Batter **
- 1 1/2 cups flour
- 2 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup sugar
- 1/4 shortening
- 1 egg
- 1/2 cup milk
Raspberry Chocolate Chip Muffins

- ½ cup butter
- ¾ cup sugar
- 1 tsp vanilla
- 1 tsp orange zest
- 1 cup miniature chocolate chips
- 2 cups flour
- 2 tsp baking powder
- ½ cup milk
- 2 cups unsweetened raspberries (fresh or frozen)
