Peachy Cupcakes

1. preheat oven to 375 2
- 1/3 cup veg oul
- 3/4 c milk, divided, room temp
- 1 egg room temp
- 1 tsp vanilla exact
- 1 cup sugar
- 2 cup sifted cake flour
- 2 tsp baking powder
- 2 tbsp potato starch
- 1/2 tsp salt
- 1/2 cup chopped pecans
- 6 peaches, skinned, grilled or roasted and pureed
