Gingerbread Cake

Lightly butter a 9 by 13 by 2-inch cake pan and line the bottom with a piece of parchment or wax paper
- Softened unsalted butter, as needed
- 1 cup vegetable oil, like soy, peanut, or corn
- 1 cup sugar
- 1 cup unsulphured molasses
- 1 to 2 tablespoons minced crystallized ginger
- 2 large eggs, at room temperature, lightly beaten with a fork
- 3 cups unbleached all-purpose flour
- 1 tablespoon ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon fine salt
- 1/4 teaspoon ground cloves
- 1 cup water
- 1 tablespoon baking soda
- Serving suggestions: Whipped cream or vanilla ice cream
Potato-Leek Gratin

In a 12-inch nonstick fry pan over medium heat, melt 4 Tbs
- 5 Tbs. unsalted butter
- 4 lb. leeks, white and light green portions, rinsed well, cut into 1/4-inch rings
- 1 1/2 Tbs. kosher salt
- 1 tsp. minced fresh thyme
- 1/4 tsp. freshly grated nutmeg
- 3/4 tsp. freshly ground pepper
- 1 cup heavy cream
- 6 oz. Gruyère cheese, grated
- 3 oz. Parmigiano-Reggiano cheese, grated
- 3 lb. russet potatoes, peeled, cut into 1/4-inch slices
- 3 Tbs. minced fresh chives
Applesauce Spice Cake

Combine all ingredients and beat at medium speed for 4 minutes
- 1 pkg yellow cake mix
- 1 pkg instant vanilla pudding mix
- 1/2 t cinnamon
- 1/2 t nutmeg
- 1 cup applesauce
- 1/4 cup oil

- 1/2 cup chopped raisins
- 1/2 cup water
Mississippi Mud Cake

Preheat oven to 350°. To prepare cake, combine 3/4 cup boiling water and 1/2 cup cocoa, stirring until blended

Beth's Melt in Your Mouth Barbecue Ribs (Oven)

Preheat oven to 300 degrees f
- 4 lbs pork ribs
- 3/4 cup light brown sugar
- 1 teaspoon hickory smoke salt
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1/2 teaspoon ground red pepper (optional)
- 2 cups of your favorite barbecue sauce (mine is Sweet Baby Ray)
Artichoke, Leek and Goat Cheese Dip with Garlic Pita Chips

1. To prepare dip, combine yogurt and goat cheese in a food processor; process until smooth
- Dip:
- 1/2 cup plain fat-free yogurt
- 3 ounces goat cheese, softened
- 1/4 cup sliced leek
- 1 (14-ounce) can artichoke hearts, rinsed and drained
- 1/2 cup (2 ounces) grated fresh pecorino Romano cheese
- 2 teaspoons fresh lemon juice
- 1/4 teaspoon freshly ground black pepper
- Dash of kosher salt
- Fresh chives (optional)
- Chips:
- 6 (6-inch) whole wheat pitas
- Cooking spray

Smoked Cheese Pasta Bake

- 1 pound uncooked penne (tube-shaped pasta)
- 1 (26-ounce) jar fat-free marinara sauce
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
- Cooking spray
- 1 1/2 cups reduced-fat sour cream
- 1 cup (4 ounces) shredded smoked farmer or mozzarella cheese
- 1/4 cup chopped fresh basil
- 1/2 cup (2 ounces) grated Parmigiano-Reggiano cheese
