Cornmeal Cranberry Muffins

Warm muffins, fresh from the oven, are a delicious choice for a hearty breakfast or an easy snack
- 3/4 cup superfine rice flour
- 1/4 cup potato-starch flour
- 1/4 cup millet flour
- 1/2 cup cornmeal
- 2 tsps baking powder
- 1 tsp baking soda
- 1 teaspoon xanthan gum
- 1/8 teaspoon cardamom
- 1/4 teaspoon salt
- 1/4 cup Egg Substitute for Baking
- 1/4 cup vegetable oil
- 1/3 cup brown sugar
- 1/3 cup rice milk
- 3/4 cup sparkling water
- 1 teaspoon vanilla extract
- 1 cup chopped cranberries
Bagel (GF)

1. Preheat oven to 375F. Put a large pot of water on to boil
- For Brushing on top of Bagels:
- 1/3 cup lukewarm milk
- 1 packet yeast (about 1 tbsp)
- 1 tsp. sugar
- 1 egg
- 1/2 cup potato starch
- 3/4 cup cornstarch
- 1/4 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. xanthan gum
- 1/2 tsp. salt
- 1/4 tsp. cider vinegar
- 1 egg white, beaten
- For Baking Sheet:
- 1 tbsp. cornmeal (optional)
Salmon Kedgeree

On greased baking sheet, brush salmon with oil; sprinkle with half each of the salt and pepper
- 8 oz (227 mL) skinless salmon fillets
- 1 tsp (5 mL) vegetable oil
- 3/4 tsp (4 mL) salt
- 1/4 tsp (1 mL) pepper
- 1 tbsp (15 mL) ghee or vegetabIe oil
- 1 small onion, chopped
- 2 tsp (10 mL) minced gingerroot
- 2 tsp (10 mL) curry powder
- 1/4 tsp (1 mL) turmeric
- 3 cardamom pods, broken (optional)
- 1 bay leaf
- 1 cup (250 mL) basmati rice
- 1-1/2 cups (375 mL) sodium-reduced chicken broth
- 1 cup (250 mL) frozen peas
- 2 tbsp (25 mL) chopped fresh coriander or fresh parsley
- 5 hard-cooked eggs, quartered
Double-Chocolate Chunk Brownies

Heat oven to 350°F (325°F for dark or nonstick pans)
- Brownies
- 1 cup butter or margarine
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 tsp vanilla
- 4 eggs
- 1 1/4 cups all-purpose flour
- 3/4 cup baking cocoa
- 1/4 tsp salt
- 1 cup semisweet chocolate chunks
- 1 cup white chocolate chunks
- Frosting
- 1 1/2 cups powdered sugar
- 1/4 cup baking cocoa
- 1/4 cup butter or margarine, softened
- 2 to 3 tbsp milk
- 1/2 cup white chocolate chunks
- 1 tsp vegetable oil
Romano's Macaroni Grill Rosemary Bread

- 1 tablespoon yeast
- 1 tablespoon sugar
- 1 cup warm water
- 2 1/2 cups flour
- 1 teaspoon salt
- 2 tablespoons rosemary
- 2 tablespoons butter
Blueberry cornmeal pancakes

Whisk first six ingredients in a large bowl
- 1/2 cups cornmeal
- 3/4 cup all purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 tsp coarse kosher salt
- 2 cups buttermilk
- 2 large eggs
- 1/4 cup canola oil
- melted butter
- 1 cup fresh blueberries
- maple syrup to serve
Cheddar Quick Bread

Mix: dry ingredients; cut butter until mixture resembles coarse crumbs
- 2 cups - flour
- 1 Tbsp - sugar
- 1-1/2 tsp - Baking Powder
- 1/2 tsp. - Salt
- 1/4 cup (1/2 stick) - butter or margarine
- 2 cups - shredded sharp cheddar cheese
- 1 cup - milk
- 1 - egg, beaten
Baked Chicken with Spinach and Cherry Tomatoes

Preheat your oven to 300°F
- 1 3 to 4 pound organic roasting chicken
- 2 onions, peeled and chopped
- 6 cloves garlic
- 2 stalks of celery, chopped
- 1 large carrot, peeled and chopped
- salt and pepper
- 1 rosemary sprig
- 2 bay leaves
- 24 cherry tomatoes
- 1 pound baby spinach

- Topping:
- Non-stick cooking spray
- 2 C. all-purpose flour
- 1 1/2 tsp. salt
- 1 tbsp baking powder
- 1 C. milk
- 2 large eggs
- 2/3 C. sugar
- 1 C. peanut butter
- 1/3 C. oil
- 1/2 C. jam or preserves of your choice
- 1/4 C. sugar
Easy Chicken Tostadas

1. Preheat oven to 400F. Combine lemon juice and salt in a small bowl
- 3 tbsp lemon juice, about 1 lemon
- 1/4 tsp salt
- 1 cup frozen corn, thawed
- 2 tomatoes, diced
- 1 avocado, diced
- 1 small onion, finely diced
- 1/2 cup sour cream
- 1 chipotle (packed in adobo sauce), finely chopped
- 1 rotisserie chicken, still warm
- 6 small tortillas
