DATE SQUARE (MOM CHARTRAND)

Mix all above ingredients
- 3 cups of rolled oates (fine - Minute oats)
- 1-1/2 cups of flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 cup of boiling water
- 1 cup brown sugar
- 1 cup melted butter
BANANA PUDDING

Preheat oven to 375°F. Line the bottom of a 9x9-inch pan with a layer of vanilla wafers
- Meringue:
- 1 cup sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 2 cups milk (NOT skim)
- 4 or 5 ripe bananas, sliced thin (cover with plastic wrap or sprinkle with lemon juice to keep them from turning brown)
- 1 box vanilla wafers
- 1 teaspoon Vanilla extract
- 1 tablespoon Butter (not margarine)
- 4 Egg yolks (Large eggs or better)
- 4 egg whites, room temperature
- 5 tablespoons sugar
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon vanilla extract
GLAZED BALSAMIC CHICKEN

In shallow dish or plastic bag, combine flour, salt and pepper
- 1/4 cup all purpose-flour
- 1/4 tsp. each salt and pepper
- 4 boneless skinless chicken breasts
- 2 tbsp. extra virgin olive oil
- 3 cloves garlic, minced
- 1/2 tsp. crumbled dried sage or rosemary
- 1 cup chicken stock
- 2 tbsp. balsamic vinegar
- 2 tsp. liquid honey
- 1 tbsp. chopped fresh parsley
SCALLOPED POTATOES

Melt butter in large Dutch oven over medium-high heat until foaming subsides
- 2 tablespoons unsalted butter
- 1 medium onions, sliced
- 2 medium cloves garlic, minced
- 1 tablespoon chopped fresh thyme leaves or dry thyme
- Salt
- Pepper
- 2-1/2 pounds russet potatoes, sliced ( about 5 medium potatoes)
- 1 cup low sodium chicken broth
- 1 cup heavy cream
- 2 bay leaves
- 1 cup shredded cheese
BUTTERSCOTCH CAKE

Pour icing mixture over batter and bake at 350 degrees for 45 minutes
- ICING:
- 1/2 cup shortening
- 1/2 cup sugar
- 1/2 cup milk
- 2 egg yolks
- 1 cup sifted flour
- 2 tsps baking powder
- 1/4 tsp vanilla
- Mix all together. Pour on an 8 x 8 pan.
- 2 egg whites
- Beat till stiff and add 1 cup brown sugar.
SMOKED BRISKET

For the rub, mix all seasoning together and rub to the beef brisket and wrap with plastic wrap and refrigerate over...
- RUB: (4 pound beef brisket, trimmed)
- 2 tbsp brown sugar
- 2 tbsp chili powder
- 2 tbsp paprika
- 2 tbsp salt
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp black papper
- 1 tbsp cayene
- 2 tsps dry mustard
- 2 tsps ground cumin
- BARBECUE SAUCE: (Note, I normally make half the recipe)
- 2 tbsp vegetable oil
- 3/4 cup chopped yellow onions
- 2 tbsp chopped garlic
- 4 cups ketchup
- 1/2 cup brown sugar
- 2 tbsp Karo Syrup
- 1/2 cup apple cider vinegar
- 1/2 cup yellow mustard
- 1/4 cup worchestershire sauce
- 3 tbsp hot red pepper sauce
- 2 tsp essence seasoning ( I normally buy Emeril's creole seasoning)
- 1/2 tsp red pepper flakes, or more to taste
LEMON BREAD

Mix flour, sugar, baking powder and salt in a large bowl
- 1-1/2 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup each milk and salad oil
- 1-1/2 tsp grated lemon peel or more
STUFFED JALAPENOS

Preheat over 425. Cook sausage until browned
- 1 lb ground sausage (HOT if ya like! )
- 22 jalapeños
- 1- 8 oz block cream cheese, softened
- 1 cup grated Parmesan cheese
PARMESAN BAKED PORK CHOPS

On a plate combine the last 4 ingredients
- 4 boneless pork chops
- 1 T. olive oil
- 1 C. parmesan cheese (I used Kraft)
- 1 C. Italian bread crumbs
- 1 tsp. pepper
- 1 tsp. garlic powder
HONEY MUSTARD DRESSING

Put all ingredients in a blenderand mix for 5 minutes
- 2 tablespoons mustard
- 1 cup mayonnaise
- 1/4 cup orange juice
- 1/2 cup honey
- Salt and pepper to taste
- Juice of 1/2 a lemon
