Blackcurrant Muffins

- 1/3 cup sugar
- 1/4 cup butter, softened
- 1 egg, beaten
- 2 1/3 cups all-purpose flour
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh or frozen blackcurrants
- 1/2 cup brown sugar
- 1/3 cup all purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 cup butter, cubed
SAUTEED CHICKEN WITH EASY MUSHROOM SAUCE

Sprinkle chicken evenly with paprika
- 2 lb. skinless chicken thighs or drumsticks
- 1 tsp. paprika
- 2 tsp. vegetable oil
- 1 onion, thinly sliced
- 3 cups mushrooms, thickly sliced
- 2 tbsp. all-purpose flour
- 1 cup milk
- Salt and pepper to taste
- Add 1 chicken Bovril to sauce
CHUNKY AVOCADO SALSA

Gently mix all ingredients in a medium bowl
- 2 cups quartered grape tomatoes
- 2 large avocados, peeled, pitted and diced
- 1/2 cup finely minced red onions
- 2 tbsp (or more) minced fresh cilantro
- 2 tbsp freshly squeezed lime juice
- 1 tsp granulated sugar
- 1/2 tsp each salt and freshly ground black pepper
CARROT CAKE

Beat egg and oil for 1 minute
- CREAM CHEESE FROSTING:
- 2-1/2 cups grated carrots
- 2 cups flour
- 2 cups sugar
- 4 eggs
- 1 cup vegetable oil
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon vanilla
- 2 teaspoons cinnamon
- 1 cup walnuts, chopped
- 1/2 cup butter, softened
- 8 oz. cream cheese, softened
- 2 teaspoons vanilla
- 3 cups powdered sugar
- 1/4 cup walnut, chopped (optional)
LOADED CAULIFLOWER

Preheat oven to 425 degrees In a large pot boil water and cook cauliflower for 8-10 minutes, drain and let cool
- 1 large head of cauliflower cut into bite size pieces (approx.. 6 cups)
- 6-8 strips of bacon, cooked and crumbled
- 6 tablespoons chopped chives
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 2 cups Colby Jack Cheese (may use cheddar)
- 1 8 oz. container sliced mushrooms

CLASSIC GUACAMOLE

Combine all ngredients in a mediumbowl
- 2 large avocados (ripe) halved, seeded and mashed
- 2 tbsp freshly squeezed lemon or lime juice
- 1/2 cup finely minced red onion
- 1/2 cup diced tomatoes (grape tomatoes work well)
- 2 tbsp minced fresh cilantro
- 1 jalepeno pepper seeded and minced, or a couple shakes of hot pepper sauce
- 2 tsp minced garlic
- 1/4 tsp each salt and ground cumin
- Pinch freshly ground black pepper
VIETNAMESE RICE PAPER ROLLS

1. Combine the Peanut Dipping Sauce ingredients
- VIETNAMESE PEANUT DIPPING SAUCE:
- 7 - 14 sheets of 22cm/8.5" round rice paper
- 11 small cooked prawns/shrimp
- 50 g / 1.5 oz dried vermicelli noodle
- 7 lettuce leaves - use a lettuce with soft leaves, like Butter lettuce
- 14 mint leaves
- 1 cup bean sprouts
- 1 tablespoon peanut butter, preferably smooth
- 2 tablespoons Hoisin Saue
- 1-1/2 tablespoons white vinegar (or lime juice)
- 1/3 cup milk
- 1 garlic clove, minced
- 1/2 teaspoon crushed chilli, samba oelak or other chilli paste, adjust to taste
CHICKEN CACCIATORI

Coat chicken pieces with flour, brown in olive oil over high heat
- 1 – 3 lb. chicken cut-up
- 1/2 cup flour
- 2 – 3 tbsp. olive oil
- 1 cup onions, chopped
- 1 clove garlic, chopped
- 1 14oz. tomato sauce
- 1 cup canned tomatoes
- 1/4 cup dry white wine
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. oregano
- 1 bay leaf
- 1 cup sliced fresh mushroom
BUTTER TARTS

For the pastry: Mix flour, baking powder, salt together
- PASTRY:
- 2 cups flour
- 1 cup lard (tender flakes)
- 2 tablespoons baking powder
- Pinch salt
- 1 egg (whisk and add enough water to make one cup)
- FILLING:
- 1 cup raisins (boil in water and drain off water)
- add 2-3 tbsp butter
- 2 beaten eggs
- 1 cup brown sugar
- 1 teaspoon vanilla
