LEMON BREAD

Ingredients
- 1-1/2 cups all-purpose flour
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup each milk and salad oil
- 1-1/2 tsp grated lemon peel or more

Preparation
Step 1
Mix flour, sugar, baking powder and salt in a large bowl. In a small bowl beat eggs, milk, oil and lemon peel until blended. Add egg mixture to flour mixture, stir until blended.
Pour batter into a greased and floured loaf pan. bake in a 350 degrees F oven until skewer inserted in center comes out clean. Bake 40 - 50 minutes.
Poke holes in loaf all the way to the bottom. Drizzle hot glaze over top.
Cool in pan on rack for 10 minutes, turn onto rack and cool completely.
LEMON GLAZE:
Combine 4-1/2 tablespoons lemon juice and 1/3 cup sugar. Cook over medium heat until sugar is dissolved. Fresh lemon juice is best but "Real Lemon" juice works too.
