BROCCOLI AND CAULIFLOWER CASSEROLE

In a saucepan bring water to a boil
- 1/2 cup uncooked white rice
- 10 ounces broccoli florets
- 10 ounces cauliflower florets
- 1/2 cup butter
- 1 onion, chopped
- 1 pound Velvetta Cheese (cubed)
- 1 can condensed cream of chicken soup
- 2/3 cup milk
- 1-1/2 cup Ritz Crackers, crushed
HONEY GARLIC PORK CHOPS

Sift together the flour, salt, black pepper, ground ginger, nutmeg, paprika and cayenne pepper
- For the Honey Garlic Sauce:
- 4 Center loin pork chops, well trimmed
- 1 CUP Flour
- 2 tsp Salt
- 2 tsp Black pepper
- 1 1/2 tbsp Ground ginger
- 1 Tbsp Ground nutmeg
- 1 Tbsp Paprika
- 1/2 tsp Cayenne pepper
- 2 Eggs
- 4 Tbsp water
- 2 Tbsp Olive oil
- 3 – 4 Cloves minced garlic
- 1 CUP Honey
- 1/4 CUP Soy sauce
- 1 tsp Ground black pepper
LAYERED PUMPKIN DESSERT

1. Layer 1: Mix flour, butter and 1/2 cup pecans together
- 1 Cup flour
- 1/2 cup Buttered, softened
- 1/2 cup plus 1/4 cup Pecans, chopped

- 3 cups Whipped topping, divided
- 2-1/2 cups milk
- 3 small packages White Chocolate pudding mix (or vanilla) - 3.4 oz. boxes
- 1 15 oz. canPumpkin puree
- 1 teaspoon Pumpkin spice

My Very Best Spaghetti Sauce Recipe

1. Brown sausage links in a fry pan over medium heat for about 15 minutes or until nice and brown

- 2 28 oz canned crushed tomatoes
- 2 15 oz. canned tomato sauce
- 2 6 oz. canned tomato paste
- 1/2 cup sugar or 4 tbsp brown sugar (splenda)
- 1 teaspoon dried basil or fresh
- 1 teaspoon thyme
- Fresh flat parsley (chopped) or 1 tsp. dried
- 2 Bay Leaves
- 1 teaspoon black pepper
- 1 teaspoon dried oregano or fresh
- 2 teaspoons crushed red pepper flakes
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon italian seasoning
SEAFOOD PASTA WITH SHERRY TOMATO CREAM SAUCE

In a large saucepan, boil water for the pasta
- 1 pound penne rigate or bow tie pasta
- 2 - 3 tbsp EVVO
- 1/2 pound shitake mushrooms, stemmed and sliced or crimini mushroom
- 2 large shallots, chopped
- 3 to 4 cloves garlic, finely chopped or grated
- A pinch or 2 crushed red pepper flakes
- 1/2 cup dry sherry
- 1/2 cup chicken stock or seafood stock
- 1 (15-ounce) can crushed tomatoes
- 1 pound shelled, cooked or raw bulk lobster pieces or shrimp
- 1 tsp lemon zest
- Salt and freshly ground black pepper
- 1/2 cup cream
- A handful chopped chives or parsley or both
PANCETTA-WRAPPED PORK WITH APPLE STUFFING

This can be prepared a day ahead - just remove it from the refrigerator about an hour before roasting it
- 1 Chorizo or cooked spicy sausage
- 1 small apple
- 1/4 cup (50 ml) dried apricots (optional)
- 4 green onions, thinly sliced
- 1 tbsp. chopped fresh rosemary or 1/2 tsp crumbled dried rosemary
- 1/2 tsp dried oregano leaves
- 1/4 tsp each salt and pepper
- 2 - 2 -1/2 lb. boneless pork loin roast
- 4 round thin pancetta slices

In a large pot boil water and cook Cauliflower for 8 - 10 minutes, drain and let cool
- 1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
- 6-8 strips of bacon cooked and crumbled (Cooked in oven at 400° for 20 mins)

- 1/2 cup Mayonnaise
- 1/2 cup Sour Cream
- 2 cups Colby Jack Cheese ( may use cheddar)
