Fried Okra

Heat oil in a large, heavy-bottomed skillet or Dutch oven to 350 degrees F
- 6 cups oil, for frying
- 1/2 cup cornmeal
- 1 cup all-purpose flour
- 2 teaspoons House Seasoning, recipe follows
- 1/4 teaspoon cayenne pepper
- 2 pounds fresh okra, sliced 1/2-inch thick
- 1/2 cup buttermilk
PRISON CAKE

Mix all ingredients with a hand mixer till smooth and thick in consistency

- 1/3 cup coarse salt (pickling salt)
- 2 quarts cold water
- 1-2/3 cups distilled vinegar
- 2/3 cups sugar
- 1 teaspoon coarse salt (pickling salt)
- 1 teaspoon mustard seed
- 1-1/2 teaspoons dill seed
- 1 white onion, sliced into rings
- 1/2 teaspoon chili pepper flakes
- 2 sprigs fresh dill
SOUTHERN STYLE CABBAGE SOUP

- 1 small head of chopped cabbage
- 2 pounds lean ground beef
- 2 cans of stewed or diced tomatoes
- 1 can Rotel
- 2 (8 oz) cans of tomato sauce
- 1 large chopped onion
- 4 stalks of finely chopped celery
- 1 small finely chopped bell pepper
- Diced potatoes
- 2 tablespoons of salsa (optional)
- 3 cups beef broth
- Cayenne pepper
- Chili powder
- 4 cloves of garlic, minced
- Paprika
- Pinch of salt
- Black Pepper
- A dash of Tony Chachere's creole
- A dash of Old Bay Seasoning
- A dash of salt-free Mrs Dash
BRAISED COLLARD GREENS WITH BACON

Cut and trim the collard greens, removing the tough stems
- 2 large bunches collard greens
- 4 ounces thick-cut bacon, chopped
- 1 yellow onion, thinly sliced
- Pinch red pepper flakes
- 1 tbsp canola, if needed
- 6 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1/4 cup dry white wine
- 1/4 cup freshly squeezed lemon juice
- Kosher salt and freshly cracked black pepper
CHEESY CAULIFLOWER PATTIES

Cut cauliflower into florets & cook in boiling water until tender about 10 minutes
- 1 head cauliflower
- 2 large eggs
- 1/2 c cheddar cheese, grated
- 1/2 c panko (found in the bread crumb aisle, healthier option)
- 1/2 t cayenne pepper (more of less to taste)
- salt
- olive oil
SHRIMP SCAMPI (FAMOUS RED LOBSTER)

Heat skillet and add olive oil
- 1 lb medium shrimp, peeled and deveined
- 1 tbsp olive oil
- 2 tbsps garlic, finely chopped
- 1-1/2 cups white wine, (Chardonnay)
- 1/2 fresh lemon, juice only
- 1 tsp Italian seasoning
- 1/2 cup butter, softened
- 1 tbsp parsley
- 1/2 cup grated parmesan cheese
PORK CHOPS WITH MARSALA MUSHROOM CREAM SAUCE

Grill or pan fry chops seasoned with salt and pepper until just cooked through
- 4 Loin Pork Chops
- 2 tbsp olive oil
- 2 tbsp butter
- 1/4 cup finely chopped onions or shallots
- 8 oz. fresh sliced mushrooms
- 1/2 cup chicken broth
- 1/4 cup Marsala Wine
- Salt and Pepper
- 4 tbsp cold water
- 2 tbsp flour
- Garnish with parsley and chives
POTATO PUFF

Preheat oven to 400 degrees F
- Ingredients
- 3 cups of mashed potatoes
- 2 eggs
- 1/3 cup sour cream (optional extra for serving)
- 1 heaping cup shredded sharp cheddar cheese
- 2 tablespoons grated Parmesan
- 2 tablespoons chopped chives or parsley
- Salt and black pepper, to taste
BREAD BUNS

Mix all together and add ½ cup oil
- 3 Cups lukewarm water
- 2 eggs beaten into this mixture add 1 Tbsp. salt and 4 Tbsps. Sugar
