Cream of Potato and Bacon Soup (MRS)

Combine the potatoes, onion, celery and carrot in a large pot over medium heat
- 4 cups diced potatoes
- 1/3 cup chopped onion
- 1/3 cup chopped celery
- 1/4 cup peeled and grated carrot
- 6 bacon slices
- 4 cups milk
- 1 tablespoon flour
- 1 teaspoon salt
- 1/2 teaspoon white pepper
Tuscan Bean Soup (SB)

Heat the oil in a large saucepan
- 3 tablespoons olive oil
- 1 onion, roughly chopped
- 2 leeks, roughly chopped
- 1 large potato, diced
- 2 garlic cloves, minced
- 1 1/4 vegetable stock
- 14-ounce can cannellini beans, drained and liquid reserved
- Generous 2 cups shredded Savoy cabbage
- 3 tablespoons chopped fresh flat-leaf parsley
- 2 tablespoons chopped fresh oregano
- 3/4 cup shaved parmesan cheese
- Salt and pepper
- For garlic toasts
- 2 to 3 tablespoons olive oil
- 6 thick slices country bread
- 1 garlic clove, peeled and bruised
Spicy Pork Empanadas (ATK)

Use your favorite pie dough
- 3 cups leftover New Mexico pork chili
- 4 scallions, chopped fine
- 1 cup pimento-stuffed green olives, chopped fine
- 1 cup shredded sharp cheddar cheese
- 3 tablespoons chopped fresh cilantro
- 1 tablespoon minced canned chipotle chiles in adobo
- 2 (9 inch) pie dough rounds
All-American Potato Salad (ATK)

Note that this recipe calls for celery seed, not celery salt; if only celery salt is available, use the same amount...
- 2 pounds russet potatoes (3 to 4 medium), peeled and cut into 3/4-inch cubes
- table salt
- 2 tablespoons distilled white vinegar
- 1 medium rib celery, chopped fine (about 1/2 cup)
- 2 tablespoons minced red onion
- 3 tablespoons sweet pickle relish
- 1/2 cup mayonnaise (see note)
- 3/4 teaspoon powdered mustard
- 3/4 teaspoon celery seed
- 2 tablespoons minced fresh parsley leaves
- 1/4 teaspoon ground black pepper
- 2 large hard-cooked eggs, peeled and cut into 1/4-inch cubes (optional)
Blueberry Pie (MRS)

- 1 recipe plain pie pastry or vinegar pie crust
- 6 cups blueberries, fresh or frozen (thawed and drained if frozen)
- 2 tablespoons lemon juice
- 1/2 cup sugar
- 1/4 cup flour
- 3/4 teaspoon cinnamon
- 2 tablespoons cold butter, cut into bits
- 1 egg beaten with 1 tablespoon whole milk, for egg wash
Fresh Apple Cake with Caramel Sauce (MRS)

Wrapped in a cheesecloth, this cake will keep moist in the refrigerator for up to six weeks
- Caramel sauce:
- 1 1/2 cups vegetable oil
- 2 cups sugar
- 2 eggs
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2 teaspoons vanilla
- 3 cups peeled, cored and grate apples (about 4 apples)
- 1 cup sweetened flaked coconut
- 1 cup chopped pecans
- 1 cup raisins
- 4 tablespoons butter
- 2 tablespoons milk
- 1/2 cup plus 1 tablespoon icing sugar
Spumoni Bars (ATK)

Combine flour, baking powder, and salt in bowl
- 2 cups flour
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 tablespoons butter, softened
- 2/3 cup sugar
- 3 large egg yolks
- 1 teaspoon vanilla
- 12 maraschino cherries, drained, stemmed and chopped fine
- 1/4 cup walnuts, toasted and chopped fine
- 1/4 cup semisweet chocolate chips, melted and slightly cooled
Olive Salad for Muffaletta

Crush each olive on a cutting board with your hand
- 1 1/2 Cups Green Olives, Pitted
- 1/2 Cup Calamatta Olives (or Black) Pitted
- 1 Cup Gardiniera (Pickled Cauliflower, Carrots, Celery, Pepperoncini)
- 1 Tbsp. Capers
- 3 each Fresh Garlic cloves, thinly sliced
- 1/8 Cup Celery, thinly sliced
- 1 Tbsp. Italian Parsley, finely chopped
- 1 Tbsp. Fresh Oregano (When I have it in my garden) or 2 tsp. dried
- 1 tsp. Crushed red pepper flakes
- 3 Tbsp. Red Wine Vinegar
- 1/4 Cup Roasted red peppers (Recipe follows)
- 1 Tbsp. Green Onions, thinly sliced
- Kosher Salt & Freshly Ground pepper To Taste (salt may not be necessary)
Sweet Potato Biscuits (ATK)

You can substitute a combination of 3 cups all purpose flour and 6 tablespoons cornstarch for the cake flour
- 2 1/2 pounds sweet potatoes (4 to 5 medium)
- 2 tablespoons cider vinegar
- 3 1/4 cups cake flour
- 1/4 cup packed dark brown sugar
- 5 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons salt
- 8 tablespoons butter, cut into 1/2 inch pieces and chilled, plus 2 tablespoons butter, melted
- 4 tablespoons vegetables shortening cut into 1/2 inch pieces
Greek Orzo, Lemon and Chicken Soup (NES)

In a stockpot bring the stock to a boil over high heat
- 10 cups chicken stock
- 3/4 cup orzo
- 4 eggs, lightly beaten with a fork
- Juice of 3 lemons
- Zest of 2 lemons
- 1 cup coarsely chopped cooked chicken
- 1 pound fresh spinach
- Salt and pepper, to taste
