Melt butter in 2 quart saucepan; add brown sugar, corn syrup and salt
- 1/2 cup butter
- 2 cups firmly packed brown sugar
- 1 cup light corn syrup
- dash salt
- 1 can condensed milk
- 1 teaspoon vanilla
Creamy Chocolate Frosting (ATK)

Cool the chocolate to between 85 and 100 degrees before adding it to the frosting
- 1/3 cup (2 1/3 ounces) granulated sugar
- 2 large egg whites
- Pinch table salt
- 12 tablespoons (1 1/2 sticks) unsalted butter, softened and cut into 1-tablespoon pieces
- 6 ounces bittersweet chocolate , melted and cooled (see note)
- 1/2 teaspoon vanilla extract

- Sauce
- 2 pounds (908g) small vine-ripened tomatoes
- 1 small fennel bulb, coarsely chopped
- 1 medium yellow onion, coarsely chopped
- 1 red bell pepper, coarsely chopped
- 4 cloves garlic, halved
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and freshly ground black pepper
- 1 can crushed tomatoes (19oz/540 ml)
- 2 cups vegetable broth
- 1 1/2 teaspoons dried Italian seasoning
- 1/8 teaspoon crushed red pepper flakes
- 8 whole basil leaves (medium sized), chopped

- 1 cup 2% cottage cheese (mash with fork)
- 1/2 cup packed freshly grated Parmesan cheese

- 1/8 teaspoon freshly ground black pepper

- Butter and flour for the cake pans
- 3/4 cup heavy cream
- 6 ounces bittersweet chocolate, coarsely chopped
- 1/2 cup sour cream
- 2 teaspoons vanilla
- 1 1/2 cups cake flour, sifted
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sugar
- 1 cup butter, slice, at room temperature
- 4 eggs, separated
- Pinch of cream of tartar
Oxtail Stew (DDD)

Put all of the ingredients in a 10 to 12-quart pot except for the beans
- 7 pounds oxtail meat
- 1 ounce sugar
- 1 ounce salt
- 1/2-ounce garlic powder
- 1 pound onions, minced
- 1 teaspoon allspice
- 2 teaspoons liquid browning (soy sauce can be substituted)
- 1 bunch scallions, minced
- 2 tomatoes, diced
- 1/3 cup soy sauce
- 1/4 cup ketchup
- 2 cans butter beans, drained
- Cornstarch mixed with cold water, if necessary

- 1/3 c Balsamic vinegar
- 3 tb Raspberry vinegar

- 1 (6-ounce) bag baby spinach (about 6 cups)
- 1 medium head frisee, washed, dried, and torn into 2-inch pieces
- 1/2 pint strawberries , washed, dried, stemmed, and quartered
- 2 tablespoons chopped fresh basil
- 7 teaspoons balsamic vinegar
- 1 tablespoon very finely minced shallot
- 3/4 teaspoon mayonnaise
