- 4 boneless, skinless chicken breasts (8 ounces each) (see note)
- 3 tablespoons vegetable oil
- 10 ounces white mushrooms, trimmed, wiped clean, and sliced thin
- 1 small leek, white part halved lengthwise, washed, and chopped (about 1 cup)
- 2 medium garlic cloves, minced or pressed through garlic press (about 2 teaspoons)
- 1/2 teaspoon chopped fresh thyme leaves
- 1 tablespoon juice from 1 lemon
- 1/2 cup dry white wine
- 1 tablespoon chopped fresh parsley leaves
- 1 cup low-sodium chicken broth
- 1 teaspoon Dijon mustard
- 2 tablespoons unsalted butter
Maple Glazed Pork Tenderloin (ATK)

This recipe will work with either natural pork or enhanced pork (injected with a salty solution)
- 3/4 cup maple syrup (see note)
- 1/4 cup molasses , light or mild
- 2 tablespoons bourbon or brandy
- 1/8 teaspoon ground cinnamon
- Pinch ground cloves
- Pinch cayenne pepper
- 1/4 cup cornstarch

- 1 tablespoon olive oil
- 3 slices reduced-sodium bacon, finely chopped
- 1 cup chopped onions
- 1 cup diced celery
- 2 teaspoons minced garlic
- 1 1/2 cups peeled, cubed sweet potato (cut into small cubes)
- 1 tablespoon minced fresh thyme or 1 tsp dried thyme (fresh is best!)

- For the Waffles
- 3 eggs
- 3/4 cup raw cashew butter (I love Artisana)
- 3 tablespoons almond milk
- 2 teaspoons bacon fat, melted

- 1 cup toasted pecans, coarsely chopped

- 1/4 cup olive oil
- 1 tablespoon apple cider vinegar
