Flank Steak with Chimichurri Sauce

1. Preheat the oven to 450 degrees
- 6-9 medium sweet potatoes (about 3 pounds), cut into long 1-inch-wide wedges
- 4 tablespoons plus 2 teaspoons olive oil
- 3 garlic cloves, 1 crushed and 2 roughly chopped
- 11/4 teaspoons salt
- 1/2 teaspoon pepper
- 1 cup cilantro leaves
- 1 cup parsley leaves
- 1 tablespoon red wine vinegar
- 2 tablespoons water
- 2 pounds flank steak

In 3-quart saucepan, stir all ingredients until well mixed
- 4 cans (14.5 oz each) diced tomatoes with Italian herbs, undrained
- 1 can (6 oz) tomato paste
- 1 large onion, chopped (1 cup)
- 8 cloves garlic, finely chopped
- 1 tablespoon olive or vegetable oil
- 2 teaspoons sugar
- 1 1/2 teaspoons dried basil leaves
- 1 teaspoon dried oregano leaves
- 1 teaspoon pepper
