Beef and Rigatoni Bake

1. Brown ground beef until no longer pink
- 2 tbsp vegetable oil
- 2 lbs lean ground beef
- 2 onions, finely chopped
- 4 stalks celery, thinly sliced
- 4 cloves garlic, minced
- 1 fresh hot chili pepper, minced
- 1/2 tsp dried thyme leaves
- 1/2 tsp salt
- 1/2 tsp cracked black peppercorns
- 1 can condensed tomato soup
- 1 cup beef stock
- 2 tbsp Worcestershire sauce
- 4 cups rigatoni
- 2 cups shredded cheddar cheese
- 1 green bell pepper, chopped
Healthier Onion Dip

Heat oil over medium heat and add onions and scallion whites
- 2 teaspoons olive oil
- 1 small onion, minced
- 2 scallions, thinly sliced, greens and whites separated
- 1 1/4 cups nonfat Greek style yogurt or 1 2/3 cups regular nonfat plain yogurt
- 1/4 cup mayonnaise
- 3/4 teaspoon onion powder
- 3/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Deon's Chili

-Cook ground beef, and then add all other ingredients
- 1 large can crushed tomatoes
- 1 large can diced tomatoes
- 1 can kidney beans
- 1 package mushrooms
- 1 onion, coarsely chopped
- 1/2 green pepper, chopped
- 3 celery stalks
- 2 lbs ground beef
- 3 cloves garlic, crushed
- chili powder to taste
- 2 bay leaves
Pork Dumplings

If you do not have traditional bamboo steaming baskets, a metal steamer works just as well
- Dumplings:
- 1 lb (500 g) medium ground pork
- 1/2 cup (125 mL) green onions, finely chopped
- 2 tbsp (25 mL) fresh cilantro, finely chopped
- 2 tsp (10 mL) fresh ginger, finely grated
- 1 cup (250 mL) shiitake mushrooms, finely chopped
- 2 tbsp (25 mL) soy sauce
- 1 tsp (5 mL) sesame oil
- 1 tsp (5 mL) sugar
- 2 tsp (10 mL) cornstarch
- 1 egg white
- 1 pkg fresh wonton wrappers
- Cabbage leaves, napa or Savoy variety
- Spicy Lime Dipping Sauce:
- 1/4 cup (50 mL) water
- 1/4 cup (50 mL) dark brown sugar
- 1/4 cup (50 mL) soy sauce
- 1 tbsp (15 mL) lime juice
- 1/2 fresh small red chili (or to taste), finely slivered

Hot and Sour Chicken Soup

Asian seasoned stir-fried chicken and veggies add a new diminsion to chicken soup
- 1 pound egg tagliatelle, for wide noodles or whole wheat spaghetti, for a heartier soup
- 3 boneless pork chops
- Salt and black pepper
- 1 1/2 teaspoons coriander, half a palmful
- 2 tablespoons peanut oil or vegetable oil, divided
- A couple of handfuls of button mushrooms, sliced
- 1 inch ginger root, grated
- 3-4 cloves garlic, grated or minced
- 1/4 cup rice wine vinegar, (eyeball it)
- 1/4 Tamari or low-sodium Tamari, (eyeball it)
- 6 cups vegetable or chicken stock
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 small bunch scallions, thinly sliced on an angle
- Tin water chestunts
- Coriander leaves, for garnish
- Lime wedges, for garnish
- Sriracha or other hot sauce, to pass at table

- 3 ripe avocados, peeled and pitted
- 1/4 cup peeled and finely chopped Italian plum tomatoes
- 1 jalapeno pepper, chopped
