Fleuri's Curry Lentil Soup

Indian spices give lentils an exotic touch
- Curry Powder:
- 1/4 cup extra virgin olive oil (EVOO)
- 5-6 cloves garlic, finely chopped or grated
- 1 small carrot, peeled and finely chopped
- 1 small chili pepper, seeded and finely chopped
- 1 large shallot, finely chopped
- 1 1/2 cups yellow, red or green lentils
- Salt
- 2 rounded palmfuls curry powder blend or Ras el hanout
- 1 quart chicken or vegetable stock
- 2-3 cups water
- 1 bundle farm spinach, trimmed, washed and dried, then coarsely chopped
- Naan bread
- 2 tablespoons butter, melted
- 3 parts coriander
- 1 part cumin
- 1 part turmeric
- 1 part hot chili powder
- 1 part garam masala
Perfect Roast Chicken

-Preheat oven to 400 F -In a roasting pan, add chopped vegetables of choice -Season the chicken both inside and out
- 1 chicken rinsed and patted dry
- 1 1/2 Tbsp Kosher salt
- 2 tsp cracked white pepper
- 1 lemon, halved
- 2 fresh bay leaves
- 6 cloves garlic, roughly chopped
- 4 sprigs rosemary, roughly chopped
- 2 Tbsp olive oil
- 2 Tbsp unsalted butter at room temp.
- 1 cup chicken stock
- 2 Tbsp roasted garlic
- 1 cup dry white wine
Lemon Cranberry Bread

1. Stir together flour, sugar, baking powder and salt
- 1 1/3 cups all purpose flour
- 3/4 cup sugar
- 2 tsp baking powder
- 2 tsp salt
- 1 beaten egg
- 1 cup milk
- 1/4 cup oil
- 2 tsp finely shredded lemon peel
- 1 tbsp lemon juice
- 1/2 cup cranberries
- 2 tbsp lemon juice
- 1 tbsp sugar
Spicy Lemongrass Soup

1. Prep all ingredients. This comes together quickly so it is nice to be fully prepped
- 1 tablespoon vegetable oil
- 4 garlic cloves, Minced
- 1 tablespoon gingerroot, Minced (About 1 Tbsp)
- 1 tablespoon garlic and red chile paste
- 2 stalks lemongrass, Peeled and Bruised
- 4 cups chicken stock
- 3 cups water
- 1 lb chicken breast, cut into small pieces
- 1 tray of mushrooms, cut into small pieces (optional)
- 1/3 lb angel hair pasta or 1/3 lb rice noodles
- 1/4 cup fresh cilantro
- 1 tablespoon oyster sauce
- 1 lime, juice of
- 3 green onions, thinly sliced
- 1 red chili pepper, finely chopped

- 1 Tbsp oil
- 1 tsp sugar
- 1 tsp salt
- 1 cup all-purpose flour
- 1 cup whole wheat flour

Healthy Banana Bread

This is a delicious healthy banana bread that I've been making for years
- Combine in a large bowl:
- 2 c whole spelt flour (or whole wheat or barley - or a mix of flours)
- 1/2 tsp salt
- 1/2 tsp soda
- 1 tsp baking powder
- Combine separately:
- 3 lg very ripe bananas (about 1&1/2c) - mashed
- 2 eggs
- 1/2 c brown sugar or sucanat
- 1/2 c milk or substitute
- zest of a lemon or orange (optional)
- 2 tsp vanilla or 1 Tbsp dark rum
- Mix wet and dry until just incorporated.

- 1 boneless pork lion (4 1/2 pounds)
