Corn Salsa

- 1 can corn-drained
- 1 can black beans (drained and rinsed)
- 1-2 diced fresh tomatoes
- 1 chopped green, red, and yellow pepper
- 1 chopped medium onion
- fresh cilantro to taste
- red wine vinaigrette dressing (1/2 bottle)
- (Ken’s Steak House Olive Oil & Red wine Vinegar Dressing or any other)
Quick & Easy Mexican Chicken

- 4 skinless, boneless chicken breasts
- 1 cup salsa
- 1 cup shredded Cheddar cheese
- 1 clove garlic, minced
- 1 pinch salt
- 1 pinch ground black pepper
- 1 pinch ground cumin
Turkey Tetrazzini

Break noodles in half. Combine noodles and broth in Pampered Chef's Deep Covered Baker
- 8 oz uncooked spaghetti noodles
- 1 can (14.5 oz) chicken broth
- 1 can (10.75 oz) condensed cream of mushroom soup
- 1/2 cup sour cream
- 1 1/2 oz Parmesan cheese, grated (about 1/3 cup), divided
- 1/2 cup 2% milk
- 1/3 cup finely chopped onion
- 2 garlic cloves, pressed
- 1/2 tsp coarsely ground black pepper
- 1 8oz slice oven rosted deli turkey (1/2 inch thick), diced
- 1 pkg (8 oz) sliced mushrooms
- 1 cup frozen cut green beans, thawed
Elegant Weeknight Chicken

- 1 pound fresh asparagus, trimmed
- 1/4 teaspoon salt, divided
- 1/8 teaspoon pepper, divided
- 1/4 cup white wine or chicken broth
- 2 tablespoons butter, melted
- 4 boneless skinless chicken breast halves (5 ounces each)
- 1 cup (4 ounces) shredded part-skim mozzarella cheese

- 4 garlic cloves, peeled
- 2 cups grape or cherry tomatoes
- 3 cups uncooked penne pasta*
- 3 cups chicken broth
- 3/4 cups dry white wine ~or add 3/4 cups more chicken broth
- 1/2 tsp salt
- 1/2 tsp coarsely ground black pepper
- 1 1/4 cups lightly packed fresh basil leaves, divided
- 1 oz Parmesan cheese, grated (about 1/4 cup)
- 2 cups diced grilled chicken breasts *I seasoned mine with Grill Mates Montreal Chicken Seasoning
- additional parmesan cheese and black pepper (optional)
Pesto-Chicken Penne Casserole

This yields 2 casseroles, 6 servings each
- 1 package (16 ounces) penne pasta
- 6 cups cubed cooked chicken
- 4 cups (16 ounces) shredded Italian cheese blend
- 3 cups fresh baby spinach
- 1 can (15 ounces) crushed tomatoes
- 1 jar (15 ounces) Alfredo sauce
- 1 jar (10 ounces) prepared pesto
- 1-1/2 cups 2% milk
- 1/2 cup seasoned bread crumbs
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
Strawberry Trifle

Prepare pudding with milk according to package directions
- 1 (5 oz) pkg instant vanilla pudding
- 3 cups cold milk
- 1 (9 inch) angel food cake, cut in cubes
- 2 cups sliced fresh strawberries
- 1 (12 oz) container frozen whipped topping, thawed

- 6 cups torn romaine lettuce
- 1 can (15 oz.) black beans, rinsed, drained
- 1 cup frozen corn, thawed
- 3/4 cup salsa
- 1/2 cup Mexican style shredded cheese
- 1/4 cup ranch dressing
- 1 cup tortilla chips, broken
Healthy Bars

A healthy "dessert" snack!
- 2 1/2 cups Kashi Go Lean cereal
- 2 cups quick oats
- 1/2 cups raisins
- 1/2 cup cranberries
- 1/2 cup sunflower seeds
- *I added 1/2 cup mini chocolate chips (optional) to her recipe
- sprinkle flax seed
- 2/3 cup honey
- 2/3 cup peanut butter
- 2/3 cup brown sugar
- 1 tsp vanilla extract
Toffee Ice Cream Pie

In a large bowl, combine ice cream and crushed candy; spread into crust
- CHOCOLATE SAUCE:
- 1 quart vanilla ice cream, softened
- 1 Heath candy bar (1.4 ounces), crushed
- 1 chocolate crumb crust (8 inches)
- 1 cup (6 ounces) semisweet chocolate chips
- 1/4 cup butter, cubed
- 1 cup confectioners' sugar
- 1 can (5 ounces) evaporated milk
- 1 teaspoon vanilla extract
