- 1 (4- to 5-pound) brisket, preferably second cut
- 1 tablespoon kosher salt
- 1 1/2 teaspoons black pepper
- 4 garlic cloves, chopped
- 6 sprigs fresh thyme
- 2 tablespoons extra-virgin olive oil
- 2 large onions, thinly sliced
- 2 large carrots, sliced into thin rounds
- 2 large celery stalks, diced
- 1 1/2 cups dry red wine
- 2 whole bay leaves
- 1 1/2 cups parsley, coarsely chopped
- Grated zest of 1 small lemon
- 3 tablespoons fresh, coarsely grated horseradish
- Flaky sea salt, for serving

- 4 Sweet Dumpling Squash
- 1 cup dry Quinoa (cook according to package directions)

In large stock pot over high heat, add butter and bacon grease
- 1 tablespoons butter
- 1.5 tablespoons bacon grease, or canola oil
- 1 red bell peppers, diced
- 1 jalapenos, minced
- 1 Anaheim chiles, roasted, peeled, chopped
- 1 poblano chiles, roasted, peeled, chopped
- 1 yellow onions, diced
- 1/2 head garlic, minced
- 1/2 pound boneless chuck, trimmed and cut into 1/4-inch cubes
- 1 pounds ground beef, coarse grind
- 1/2 pound bulk Italian sausage
- 1 teaspoon granulated onion
- 1 teaspoon granulated garlic

- One 3-pound chuck roast, tied
- Kosher salt
- 3 ribs celery, thinly sliced on the bias

- 1/2 cup tomato paste
- 1/2 cup red wine vinegar
- 4 cups chicken stock

- 2 strips orange zest (removed from the orange with a vegetable peeler)
- 2 star anise
- 1 fresh thyme bundle
- 2 cups 1/2-inch diced butternut squash
- 1 1/2 cups 1/2-inch diced Jerusalem artichokes
- 6 to 8 dried figs, stems removed and quartered

- 1/4 cup flour (OPTIONAL)
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 medium garlic cloves, minced
- 1/3 cup dry white wine*
- 1 cup low-sodium chicken stock/broth
- 1-2 level teaspoon cornstarch
- 4 tablespoons fresh lemon juice
- 4 tablespoons rinsed and drained capers
- 1/2 cup reduced fat cream (or heavy cream)
- 3 tablespoons coarsely chopped parsley, to serve
