- 1/4 cup(s) teriyaki sauce, divided (natural variety recommended)
- 3/4 pound(s) raw lean beef tenderloin, sliced into eight 1/4-inch-thick slices
- 8 medium scallion(s), trimmed of roots and rinsed
- 1 medium carrot(s), peeled and sliced into long thin strips
- 2 cup(s) cooked brown rice, short grain, cooled
- 4 sheet(s) nori seaweed
- 3 Tbsp water
- 2 tsp ginger root, finely minced
- 1 Tbsp fresh lemon juice
- 1 Tbsp chives, fresh, chopped
Carpaccio

To make the aioli, with the back of a knife, crush the garlic
- 1 clove garlic
- 1/2 teaspoon salt
- 2 large egg yolks
- 1 1/2 tablespoons freshly squeezed lemon juice
- Pinch cayenne
- 3/4 cup olive oil
- 1/4 cup extra-virgin olive oil
- 2 tablespoons water
- 1 (2-pound) piece beef tenderloin, cooked rare and sliced as thinly as possible
- 3 cups baby arugula, washed and spun dry
- 4 plum tomatoes, chopped
- Freshly ground black pepper
- 2 tablespoons drained, small capers, plus more for garnish
- Nicoise olives, for garnish
- Hot sauce, for garnish
- 1/4 pound Parmesan or Asiago, thinly shaved or coarsely grated

- 1 pear, peeled, cored, and thinly sliced
- 1 tablespoon all-purpose flour
- 4 grapefruit, peeled, pith removed, and sliced

Sunchoke Soup with Brussels Sprouts and Hazelnuts

Preheat oven to 400°. Pulse sunchokes in a food processor until coarsely chopped, working in batches if necessary
- 1 1/2 pounds sunchokes, scrubbed well and very dark spots removed

Red Curry-Lime Chicken Wings

- 4 pounds chicken wings, tips discarded, wings separated into 2 pieces
- Extra-virgin olive oil, for drizzling
- Salt and freshly ground pepper

- 1 tablespoon honey
- Juice and finely grated zest of 1 lime

- 1 1/2 pounds unpeeled, large fresh shrimp
- 1/4 cup tequila
- 2 tablespoons frozen orange juice concentrate, thawed
- 2 tablespoons fresh lime juice
- 2 garlic cloves, minced
- 1 jalapeño, seeded and minced
- 1/2 teaspoon salt
- 2 tablespoons chopped fresh cilantro
- 1 red bell pepper, cut into 1-inch pieces

Meatball Minestra

In a heavy bottomed soup pot heat olive oil over medium to medium-high heat
- 3 tablespoons extra-virgin olive oil
- 1/4 pound pancetta, diced
- 1 medium-large onion, chopped
- 3 cloves garlic, grated or finely chopped
- 2 heads escarole, chopped
- Salt and freshly ground black pepper
- Freshly grated nutmeg, to taste
- 1 (15-ounce) can cannellini beans, drained
- 2 quarts chicken stock
- 3 cups water
- 1 pound ground beef, pork and veal, meat loaf mix
- 1 large egg
- 2 handfuls bread crumbs
- Splash milk
- A handful grated Parmigiano-Reggiano, plus some to pass at table
- 1 teaspoon fennel seeds
- 1/2 teaspoon allspice
- A handful fresh parsley leaves, finely chopped
- 1 cup mini penne or ditalini pasta
- 1 lemon, zested, for garnish
Cuban Spiced Pork Tenderloin

Preheat the oven to 450 degrees F Cut 4 slits into each loin and nest garlic and bay into meat
- 2 pork tenderloins, trimmed, about 2 pounds total weight
- 4 cloves garlic, cracked away from skin
- 4 bay leaves
- 2 teaspoons anise seed
- 2 teaspoons ground coriander
- 1 tablespoon ground cumin
- 2 limes, zested
- 2 tablespoons grill seasoning blend (recommended: McCormick Montreal Steak Seasoning) or coarse salt and pepper
- Extra-virgin olive oil, or vegetable oil, to coat
- Optional garnishes: chopped mango or kiwi, or chopped cilantro and scallions
Grilled Skirt Steak with Shallot Pan Sauce

Heat oil in a large stainless-steel skillet over medium-high heat
- 1 tablespoon vegetable oil
- 1 oz. skirt steak, halved crosswise
- Kosher salt and freshly ground black pepper
- 1 shallot, finely chopped
- 1 teaspoon mustard seeds (any color)
- 4 sprigs thyme
- 1/2 cup dry white wine
