Mesa Grill's Southwestern Potato Salad

Combine all the ingredients, except the potatoes, in a medium bowl and season with salt and pepper, to taste
- 1 1/2 cups prepared mayonnaise
- 1/4 cup Dijon mustard
- 2 tablespoons fresh lime juice
- 2 tablespoons chipotle pepper puree
- 1 large ripe tomato, seeded and diced
- 1/4 cup chopped cilantro leaves
- 3 scallions, chopped, white and green parts
- 1 medium red onion, thinly sliced
- 1/2 teaspoon cayenne
- 4 cloves garlic, finely chopped
- Salt and freshly ground black pepper
- 16 new potatoes, about 3 to 4 pounds, cooked, drained and sliced 1/2-inch thick
Sloppy Tacos

Lime sour cream; Mix sour cream, lime zest, lime juice, cilantro, and vinegar in a medium bowl; season with salt
- Lime sour cream:
- 1 cup sour cream
- 1 Tbsp. finely grated lime zest
- 1/4 cup fresh lime juice
- 2 Tbsp. chopped fresh cilantro
- 1 Tbsp. unseasoned rice vinegar
- Kosher salt
- Filling and Assembly:
- 2 Tbsp. olive oil, divided
- 2 lb. ground beef chuck
- 1 small yellow onion, chopped
- 6 garlic cloves, finely chopped
- 1 14-oz. can whole peeled tomatoes
- 1 12-oz. bottle tomato-based chili sauce (such as Heinz)
- 1/4 cup Worcestershire sauce
- 3 Tbsp. ancho chile powder or chili powder
- 1 Tbsp. garlic powder
- 1 Tbsp. onion powder
- 1 Tbsp. brown sugar
- 1 Tbsp. ground cumin
- 12 crisp taco shells, warmed
- Shredded Wisconsin cheddar, lettuce, pico de gallo, cilantro, and lime wedges (for serving)
Greek-Style Stuffed Peppers

Preheat the oven to 350 degrees F
- 1 pound lean ground beef
- 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 medium zucchini, coarsely grated (about 2 cups)
- 1 small onion, minced (about 1 cup)
- 1/2 cup bulghur
- 1 egg, lightly beaten
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- Freshly ground black pepper
- 3 red bell peppers, halved lengthwise, cores and ribs removed
- 2 (14 1/2-ounce) cans low-sodium stewed tomatoes, finely chopped
- 1/3 cup crumbled feta cheese
Thai Red Curry Mac 'n' Cheese

For the mac 'n' cheese: Bring 4 quarts of water to a boil in a large pot
- Mac 'n' Cheese:
- Kosher salt
- 1 pound elbow macaroni
- 5 tablespoons butter
- 5 tablespoons all-purpose flour
- 1 (4-ounce) jar Thai red curry paste
- 2 cups whole milk
- 2 cups cream (alternatively, use 5 cups whole milk instead of both milk and cream)
- 8 ounces Monterey Jack cheese, grated
- 8 ounces Cheddar cheese, grated
- Crumb Topping:
- 3/4 cup panko bread crumbs
- 2 tablespoons butter, melted
- Kosher salt and freshly ground black pepper

- 1/4 cup applesauce

- 1 3/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1 cup mini semisweet chocolate chips
- Dipping Chocolate:
- 12 ounces dark chocolate wafers or semisweet chocolate chips
- 6 blocks chocolate-almond bark, such as CandyQuik. Regular milk chocolate with a bit of coconut oil will do the trick
