BRUSSELS SPROUTS WITH BACON

In a large, non-stick skillet, brown the Brussels sprouts in the hot fat
- 3 slices bacon, diced
- 1 tbsp olive oil
- 6 cups Brussels sprouts, halved
- 3/4 cup chicken broth
- 1 tbsp whole grain mustard
- 1/3 cup chopped, toasted pecans
- Salt and pepper
GRILLED CAESAR SALAD

Grill romaine hearts, cut sides down, over medium-high heat until grill-marked and just wilting, 1 to 2 minutes
- Creamy Caesar Dressing:
- 2 hearts romaine lettuce, halved
- 1/2 cup shaved Parmesan cheese
- 2 tbsp lemon juice
- 2 tsp red wine vinegar
- 2 tsp Worcestershire sauce
- 2 tsp Dijon mustard
- 2 anchovy fillets, minced (or 1 tsp anchovy paste)
- 1 clove garlic, minced
- 1/4 tsp pepper
- 1/4 cup extra virgin olive oil
- 2 tbsp light mayonnaise
HAWAIIAN SUNSET

Mix the ingredients, except the grenadine, over ice
- 1 oz white Rum
- 2 oz orange juice
- 2 oz pineapple juice
- 1/2 oz grenadine or 2 oz cranberry juice
HY'S CAESAR DRESSING

Crush garlic in bowl. Add the rest of ingredients and mix well
- 2 garlic cloves
- 1 egg
- 4 shakes Worcestershire
- 4 shakes Tabasco
- 1/2 tsp anchovy paste
- 1 tbsp red wine vinegar
- 3 tbsp olive oil
- 1 tbsp freshly squeezed lemon juice
- 1/4 cup Parmesan cheese
- Salt and pepper to taste
ASPARAGUS WITH LEMON BUTTER SAUCE

FOR THE ASPARAGUS: Fill a large pot with about 2 inches of salted water and bring to a boil
- FOR THE ASPARAGUS:
- Water
- Salt
- 2 pounds asparagus, trimmed
- FOR THE LEMON BUTTER SAUCE:
- 3 tablespoons fresh lemon juice
- 3 tablespoons organic, low-sodium vegetable broth
- 1 teaspoon white vinegar
- 3 tablespoons heavy cream
- 1 teaspoon sugar
- 4 tablespoons unsalted butter, cut into pats
- salt and fresh ground pepper, to taste
- Garnish with parmesan cheese, fresh chopped parsley and lemon zest
VERY BERRY GALETTE

Whirl flour with sugar and 1/4 tsp salt in a food processor
- Pastry:
- 1 1/4 cups flour
- 1 tbsp sugar
- 1/4 tsp salt
- 1/2 cup cold unsalted, butter, cubed
- 4 tsp ice water
- 1 tbsp lemon juice
- Filling:
- 1/3 cup packed brown sugar
- 3 tbsp cornstarch
- 1/8 tsp salt
- 4 cups berries
- 1 tsp sugar
- Icing sugar (optional)
PINA COLADA PANCAKES

In a medium bown, beat eggs
- 2 eggs
- 1/2 cup crushed pineapple, not drained
- 1/3 cup pineapple juice or milk
- 1/2 cup melted butter
- 1/4 cup canned cream of coconut
- 1/2 tsp rum extract
- 1 1/4 cups flour
- 1 tbsp sugar
- 4 tsp baking powder
- 1/2 tsp salt
- Vegetable oil
HY'S CHEESE TOAST (Patti's Version)

Slice French bread lenghwise Mix rest of ingredients together and spread onto bread
- 1 loaf French bread
- 1 cup cheddar cheese, grated
- 1 cup gruyere cheese, grated
- 1/3 cup mayonnaise
- 1/3 cup butter
- 1 garlic clove, crushed
- May need to adjust butter and mayonnaise amounts.

- 1/4 cup (50 mL) butter, softened
- 2 tbsp (25 mL) chopped sun-dried tomatoes
- 1 tbsp (15 mL) chopped drained capers
- 1/4 tsp (1 mL) freshly ground pepper
- 4 rib-eye steaks, 1 inch (2.5 cm) thick
CHEDDAR APPLE SOUP

- 1/4 cup unsalted butter
- 1 small apples, peeled, cored and chopped
- 1 large leek, white and light green parts only, sliced
- 1 carrot, chopped
- 1 stalk celery, chopped
- 1/4 cup flour
- 2 1/2 cups chicken stock
- 1 1/2 cups apple juice
- 1 tsp curry powder
- 1 tsp ground cumin
- Pinch hot pepper flakes
- 8 oz aged orange Cheddar cheese, shredded (about 2 cups packed)
- 1 cup freshly grated Parmesan cheese
- White pepper
- Chopped fresh parsley or chives
