GREEN GODDESS DRESSING

Combine all ingredients in food processor;
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 clove garlic, crushed
- 1/4 cup finely chopped parsley (flat-leaf, if possible)
- 2 tbsp chopped chives
- 1 tbsp lemon juice
- 1 tsp chervil
- 1 tbsp tarragon vinegar
- 1/2 tsp salt
- Black pepper
- 1 tsp anchovy paste
- 2 tbsp cream
POTATO & SPRING VEGETABLE GRATIN

Gratin: In large non-stick skillet, cook bacon over medium-high heat, turning once, until crisp, about 4 minutes
- Gratin:
- 4 strips bacon
- 1 tsp olive oil
- 1 small bulb fennel, trimmed, cored and thinly sliced
- 2 carrots,thinly sliced on the diagonal
- 8 yellow-fleshed potatoes, peeled and cut in 1/4" thick slices
- 1 1/2 cups sodium-reduced chicken broth
- 1 cup whipping cream
- 1/2 cup milk
- 3 sprigs fresh thyme
- 2 clove garlic, minced
- 1/2 tsp each salt and pepper
- 3 tbsp flour
- 1 cup shredded Gruyere cheese
- Topping:
- 1 cup fresh bread crumbs
- 1/2 cup shredded Gruyere cheese
- 2 tbsp butter, melted
SALTED CARAMEL & CHOCOLATE TART

Position rack in centre of oven
- Crust:
- 1 1/4 cups flour
- 2 tbsp sugar
- 1/2 cup cold unsalted butter, diced
- 1 egg yolk
- Filling:
- 1 cup sugar
- 1/2 cup water
- 1 1/2 cups 35% cream, divided
- 1 1/4 tsp pink salt (or sea salt), divided
- 1 1/4 cups 70% dark chocolate, chopped
- 2 tsp unsalted butter, diced
PISTACHIO CRUSTED SALMON

Preheat broiler. In a bowl, add all but salmon and pistachios
- 1 tbsp Dijon mustard
- 2 tbsp raw honey
- 2 tbsp lemon juice
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 4 wild salmon filets
- 1 cup pistachios, roughly chopped
CREAMY DILL & BACON POTATO SALAD

Cook the potatoes until soft in boiling salted water
- 2 lbs boiled red baby potatoes
- 1/2 lb bacon, cut into small pieces and cooked until crisp
- 1 tbsp grainy Dijon mustard
- 5 tbsp mayonnaise
- 1 oz dill, chopped
- Juice from half a lemon
- Worcestershire sauce
- Salt and pepper

- 1/2 cup packed dark brown sugar
- 1/2 cup scotch or bourbon
- 1/4 cup soy sauce
- 1 tsp freshly ground pepper
- 3 1/2 lb salmon fillet
- 1 cup toasted, chopped pecans
- 1 tbsp butter, melted
- 1/4 tsp salt
- 1/4 tsp ground pepper
WHIPPED POTATOES

In large bowl, mash the potatoes
- 2 1/2 lbs potatoes, cooked
- 3 oz package cream cheese
- 1/2 - 3/4 cup sour cream
- 1/4 cup butter
- 1/2 tsp garlic salt
CRAB & SHRIMP DIP WITH SWISS CHEESE

Place the cream cheese in a bowl and beat until smooth and lightened
- 1 250 gram pkg. firm cream cheese, at room temperature
- 1 cup grated Swiss cheese
- 1/2 cup mayonnaise
- 1/2 pound cooked salad shrimp, patted dry and coarsely chopped
- 1 120-g can of crab meat, drained well and patted dry
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill, plus a few sprigs for garnish
- 1 garlic clove, crushed
- Dashes of Tabasco and Worcestershire sauce
- Salt and white pepper, to taste
SHRIMP VERACRUZ

Heat 2 tbsp oil in skillet and add shrimp
- 1 lb medium shrimp
- 1/4 cup canola oil (divided)
- 1 tbsp lime juice
- 1 green pepper, cut into strips
- 1/3 cup onion, chopped
- 1 , 4 oz can chopped green chilies
- 1 tsp salt
- 1 , 16 oz jar taco sauce
- 2 medium tomatoes, chopped
- 15 pimento stuffed olives
- 1 tbsp capers
- 1/4 tsp cumin
- 1/2 tsp sugar
- Cooked rice
BRUSSEL SPROUTS SALAD

Salad: Toss all ingredients, except dressing, salt and pepper together in a mixing bowl
- Salad:
- 6 doz Brussels sprouts (cut core off,cut in half, cut each half in thirds)
- 6 tbsp dried cranberries
- 9 slices smoked bacon (cooked until crispy, chopped)
- 1/4 cup Manchego Cheese, grated
- Kosher salt and ground black pepper
- Honey Roasted Cashews:
- 1 cup raw cashew pieces
- 3 tbsp honey
- 1 tbsp unsalted butter (cut in very small pieces)
- 1/2 tsp Kosher salt
- Mustard Seed Vinaigrette:
- 1/2 cup whole grain mustard
- 1/4 cup Dijon mustard
- 1/4 cup cider vinegar
- 1/4 cup honey
- 1/4 cup fresh lemon juice
- 2 cups blended oil
- 1/2 cup apple juice
- Kosher salt and ground black pepper
