HAWAIIAN QUESADILLAS

Heat grill to medium-low. Grill pineapple rings 2 minutes on each side or until heated through; cut in half
- 2 cans (8 oz each) pineapple rings in juice, drained
- 1/4 cup mayonnaise with olive oil
- 1 tbsp chopped chipotle peppers in adobo sauce
- 4 flour tortillas
- 6 oz thinly sliced ham
- 1 cup shredded Monterrey Jack cheese
CITRUS & VODKA-MARINATED PLANKED SALMON

Immerse cedar plank in a sink or large container of water
- 1 untreated cedar plank (about 6+ x 15" x 1/2")
- 4 salmon fillets with skin (about 6 oz each)
- 2/3 cup fresh orange juice
- 1/2 cup vodka
- 1/3 cup fresh lemon juice
- 1/4 cup fresh lime juice
- 1 tsp each grated orange peel, lemon peel and lime peel
- 1 tsp chopped fresh dill
- 4 sprigs fresh thyme
- 1/2 tsp fennel seed, crushed
- 1/2 tsp pink peppercorns, crushed

1. In large bowl, combine flour and salt
- Pastry:
- 500 ml all purpose flour 2 cups
- 2 ml salt 1/2 teaspoon
- 125 ml butter or margarine 1/2 cup
- 50 ml shortening 1/4 cup
- 90 ml ice water 6 tablespoons
- Filling:
- 15 ml olive oil 1 tablespoon
- 1 onion, chopped
- 1 ml salt 1/4 teaspoon

- 750 ml frozen kernel corn 3 cups
- 1/2 red pepper, seeded, cored, chopped
- 1 jalapeno pepper, seeded, cored and chopped
- 1 - 2 ml hot pepper sauce
- 15 ml chopped fresh cilantro
- 5 ml dried leaf oregano 1 teaspoon
- 125 ml grated cheddar cheese 1/2 cup

- 1 tbsp hoisin sauce
- 2 tsp soy sauce
- 1/2 tsp sugar
- 1/2 tsp chili garlic sauce

- 1 clove garlic, minced
- 1 tbsp minced gingerroot
- 1/4 tsp hot pepper flakes
- 1 lb large raw shrimp, peeled and deveined
- 6 oz snow peas, trimmed

- 1/2 cup Cornstarch

SPINACH SALAD WITH BASIL DRESSING

In a large bowl, combine spinach, avocado, onion, feta and nuts
- Salad:
- 1 bunch spinach, torn into pieces*
- 1 small avocado, cubed
- 1/2 small red onion, thinly sliced
- 4 ounces feta cheese (1/2 cup), crumbled
- 1/2 cup walnuts or pieces, coarsely chopped
- Dressing:
- 2 large garlic cloves, minced
- 1/4 cup fresh basil leaves (packed) or 2 tablespoons dried basil
- 1/4 cup red wine vinegar
- 2 teaspoons granulated sugar
- 1/2 cup olive oil
- 1/2 teaspoon freshly ground black pepper
PINEAPPLE UPSIDE-DOWN CAKE

- 340 g frozen peeled shrimp, thawed
- 4 cups thinly sliced romaine lettuce
- 1 small red onion, thinly sliced
- 1 cup crumbled feta cheese
- 1 cup halved cherry tomatoes
- 1/4 cup pumpkin seeds
- 1/4 cup kalamata olives, cut in half
- 1/4 yellow pepper
- 1/4 orange pepper
GRILLED VEGGIE & SAUSAGE SALAD

- 4 large russet potatoes, preferably red
- 1 zucchini, cut into chunks
- 1 yellow pepper, cut into chunks
- 1 red pepper, cut into chunks

- 1 red onion, cut into chunks
- 1 tbsp extra-virgin olive oil
- 3 mild Italian sausages
- 1/3 cup shredded fresh basil
