Sandwiches- Cheesesteak Subs

Preheat the broiler in your oven and adjust a rack to the upper-middle position
- 2 tablespoons butter
- 1 onion, halved and sliced into thin half moons
- 2 garlic cloves, finely minced
- 1/4 teaspoon dried oregano
- 2 tablespoons A-1 steak sauce
- 1 pound deli roast beef, cut into 2-inch strips
- Salt and pepper
- 4 (6-inch) sub rolls, split partially open lengthwise
- 8 slices provolone cheese
Iced Coffee

To make the coffee base, combine the ground coffee and cold water in a very large container
- For the coffee base:
- 8 oz. ground dark roast coffee
- 4 quarts cold water
- For a basic iced mocha:
- 1 1/2 tbsp. simple syrup (flavored or plain)
- 1 1/2 tbsp. chocolate syrup (to make an iced mocha)
- Ice cubes (approximately 1-1 1/2 cups)
- Chilled coffee base (above)
- Milk, half-and-half, or cream (I use 2% milk)
Chicken Taquitos

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray
- 1/3 C (3 oz) cream cheese
- 1/4 C green salsa
- 1 T fresh lime juice
- 1/2 t cumin
- 1 t chili powder
- 1/2 t onion powder
- 1/4 t granulated garlic
- 3 T chopped cilantro
- 2 T sliced green onions
- 2 C shredded cooked chicken
- 1 C grated pepperjack cheese
- small corn tortillas
- kosher salt
- cooking spray
Spaghetti Sauce

Heat olive oil over medium high heat
- 3 tablespoons olive oil
- 2 cups onion, chopped and divided
- 1 red pepper, coarsely chopped
- 2 pounds hamburger (at least 90% lean)
- 5 cloves garlic, finely chopped
- 1 12 oz. can tomato paste
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 3 teaspoons dried oregano
- 3 teaspoons dried basil
- 1 1/2 teaspoons dried thyme
- 2 14-oz. can Italian-style diced tomatoes
- 2 28-oz. can crushed tomatoes
- 1 carton fresh mushrooms (optional)
- 1 1/2 cups beef stock or beef broth
- 2 tablespoons brown sugar
- 2 bay leaves
- 2 tablespoons balsamic vinegar
Fajitas

Marinade: Mix all that stuff up and place in a zip-lock bag
- Fajitas Marinade:
- 1/4 C fresh lime juice
- 1/3 C water
- 2 T vegetable oil
- 2 cloves garlic, pressed or finely minced
- 3 t vinegar
- 2 t soy sauce
- 1/2 t liquid smoke*
- 1 t salt
- 1/2 t chili powder
- 1/2 t cayenne pepper
- 1/4 t ground black pepper
- 1/4 t onion powder
- For the Fajitas:
- -Boneless skinless chicken breasts (about 3 large ones). Steak is also great.
- -Bell Peppers (about 3 large ones)
- 1 -1 Onion.

BBQ Chicken Legs- Oven

- 18 whole Chicken Legs
- 1 Tablespoon Canola Oil
- 1/4 whole Onion, Diced
- 2 cloves Garlic, Minced
- 1 cup Ketchup
- 1/4 cups Packed Brown Sugar
- 2 Tablespoons (additional) Brown Sugar
- 4 Tablespoons Distilled Vinegar (less To Taste)
- 1 Tablespoon Worcestershire Sauce
- 1/3 cups Molasses
- 4 Tablespoons Chipotle Adobo Sauce (the Adobo Sauce Chipotle Peppers Are Packed In)
- Dash Of Salt

- 1 (21 oz) can cherry pie filling
- 1 tsp almond extract
- 2 eggs
- 1 cup white sugar
- 5 Tb butter
- 1/3 cup milk
- 1 cup semi-sweet chocolate chips

- 2 cups (10 ounces) all-purpose flour
- 1 cup (about 5 ounces) yellow cornmeal
- 1 1/2 teaspoons baking powder
