Place the chicken drumettes in a gallon freezer zip lock bag
- 4 pounds chicken drumettes or wings or both
- 1/2 cup lemon juice (the juice of 3 large lemons)
- 3/4 cup regular olive oil
- 4 cloves of garlic, peeled and smashed
- 1 tablespoon dried oregano
- 4 springs fresh rosemary, stripped and roughly chopped
- 3/4 tablespoon coarse Kosher salt
- 1/2 teaspoon pepper
Grilled-Vegetable Salad with Lentils

Prepare grill. To prepare lentils, rinse and drain lentils
- Lentils:
- 1 1/3 cups dried lentils
- 4 cups water
- 1 bay leaf
- 1/2 cup finely chopped red onion
- 2 tablespoons coarsely chopped walnuts
- 1 1/2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons red wine vinegar
- 1 teaspoon dried herbes de Provence
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 small garlic clove, minced
- Vegetables:
- 24 asparagus spears, trimmed (about 12 ounces)
- 2 zucchini, cut diagonally into 1-inch-thick slices
- 1 small yellow bell pepper, quartered
- 1 small orange bell pepper, quartered
- 1 small red bell pepper, quartered
- 1 (12-ounce) eggplant, cut crosswise into 1/2-inch-thick slices
- 1 1/2 tablespoons olive oil
- 2 teaspoons red wine vinegar
- 1 teaspoon chopped fresh or 1/4 teaspoon dried thyme
- 1 teaspoon dried herbes de Provence
- 1/2 teaspoon salt

Salt-and-Vinegar Boneless "Wings"

Step 1 Preheat oven to 450°F
- 1 pound boneless, skinless chicken breasts
- 1 cup whole buttermilk, divided
- 3 tablespoons malt vinegar, divided
- 1 1/2 cups crushed cornflakes
- 2 tablespoons plain yellow cornmeal
- 1 teaspoon garlic powder
- 3/4 teaspoon paprika
- Cooking spray
- 3/8 teaspoon flaked sea salt
- 1/4 cup canola mayonnaise
- 2 teaspoons chopped fresh dill
- 1/2 teaspoon black pepper
- 1 small garlic clove, grated
Big Joe’s Award Winning Ribs

After you have prepared the ribs, generously apply the rub to both sides of the ribs
- Big Joe’s Emergency Rub:
- Two racks of ribs (pork, membrane removed and trimmed – the large pork ribs, not the baby back ribs, those are too small!)
- 1 can of beer (o.k., two cans of beer one for the ribs and one for you.)
- 2 cups of rub (I use Butch’s but just in case you can’t get Butch’s in time, here’s a rub recipe that I’ve used before that works well)
- 1 cup paprika
- 1 1/2 cups brown sugar
- 1/2 cup garlic powder
- 1/4 cup Kosher salt
- 1/2 cup onion powder
- 1/2 cup chili powder
- 1/4 cup black pepper freshly ground
- 1/4 cup cayenne pepper
- 1 tablespoon white pepper
- 2 tablespoons of dried thyme
- 2 tablespoons of dried oregano
- 1/4 cup ground cumin
- 1 1/2 teaspoons finely grated orange zest
- Butch’s Doctored Barbeque Sauce, Big Joe Style:
- 1 bottle 18 oz of Butch’s Mild Barbeque Sauce (if you can’t get Butch’s try an upscale Barbeque sauce)
- 1 bottle 18 oz of Butch’s Pyro Barbeque Sauce (if you can’t get Butch’s try an upscale Barbeque sauce)
- 2 tablespoons of habanera infused honey
- 1/4 cup of orange juice
- 1/2 cup of bourbon liquor (optional)
- 2 cloves of garlic, finely chopped

- CRUMB TOPPING:
- 1/2 cup plus 2 tbsp. all-purpose flour
- 1/3 cup each packed light-brown sugar and granulated sugar
- 1 tsp. ground cinnamon
- 1/2 cup walnuts, chopped
- 1 stick cold butter, cut in small pieces
- FILLING:
- 7 medium to large tart apples (I used Granny Smith)
- 1 tbsp. lemon juice
- 1/2 granulated sugar
- 3 tbsp. flour
