Meat Sauce

Sneaky Chef recipe
- 2 T EVOO
- 1 medium onion, pureed
- 1 lb lean ground beef or turkey
- 1 clove minced garlic
- 1/2 tsp salt
- freshly ground pepper, to taste
- 1/4 cup plus 2 T orange puree
- 1/4 cup white bean puree
- 1 6-oz can plus 2 T tomato paste
- 1 28-oz can plum tomatoes, pureed with their juice
- 2 T grated Parmesan cheese
Cuban Pork Shoulder with Beans and Rice

1. Combine first 4 ingredients in a blender; process until smooth
- 2 3/4 cups unsalted chicken stock
- 1 cup fresh orange juice (about 4 oranges)
- 1/2 cup chopped cilantro stems
- 1 medium orange, quartered
- 1 3/4 teaspoons kosher salt, divided
- 1 1/2 teaspoons freshly ground black pepper, divided
- 4 center-cut bacon slices, chopped
- 1 (2 1/2-pound) bone-in pork shoulder, trimmed
- 1 pound dried black beans
- 2 1/4 cups chopped onion, divided
- 10 garlic cloves, crushed and divided
- 1/4 cup chopped fresh oregano, divided
- 2 teaspoons paprika
- 2 teaspoons ground cumin
- 1 1/2 teaspoons crushed red pepper
- 1 bay leaf
- 1 1/2 cups chopped tomato
- 1 jalapeño pepper, seeded and thinly sliced
- 2 2/3 cups hot cooked white rice
- 1/4 cup chopped fresh cilantro

Drain fruit - puree and pour into crockpot
- 4 28-oz cans peaches or apricots, drained (or use fresh fruit, peeled and pitted)
- 3-4 cups sugar
- 2 tsp cinnamon
- 1 tsp cloves
- 2 T lemon juice
Pizza Dip

Serve this pizza dip with a French baguette
- 8 ounces light cream cheese, softened
- 1/4 teaspoon garlic powder (or use clove of garlic, sauteed with onion)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried parsley
- 1/4 teaspoon dried basil
- 1 cup shredded mozzarella cheese
- 1/2-1 cup Parmesan cheese
- 1 cup pizza sauce
- 1/4 cup chopped green or red bell pepper
- 1/4 cup chopped onion (can saute with garlic to soften)
- 2 ounces sliced turkey pepperoni
- 2 tablespoons sliced black olives, sliced, optional
Banana Coconut Cream Pie

In heavy saucepan, dissolve cornstarch in water; stir in milk and egg yolks
- 3 tablespoons cornstarch
- 1 1/3 cup water
- 1 can (14 ounce size) sweetened condensed milk (not evaporated milk)
- 3 egg yolks, beaten
- 2 tablespoons butter or margarine
- 1 teaspoon vanilla extract
- 1/2 cup flaked coconut, toasted
- 2 medium bananas
- lemon juice from concentrate
- 1 graham cracker crumb crust (6-ounce size)

In a food processor, combine the flour, sugar and salt; cover and pulse until blended
