Spelt Carrot Cake

This pan cake is moist and packed with the goodness of carrots, raisins and pineapple
- Cream Cheese Frosting (optional):
- 2-1/3 cups spelt flour
- 2 tsp ground cinnamon
- 1-1/2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp ground nutmeg
- pinch salt
- 1-1/2 cups packed light brown sugar
- 3/4 cup 100% pure canola oil
- 1/2 cup orange juice
- 3 eggs
- 2 tsp vanilla
- 2 cups grated carrots
- 1/2 cup sweetened shredded coconut
- 1/2 cup golden raisins
- 1/3 cup crushed pineapple, drained
- 1/2 cup unsalted butter or margarine, softened
- 1/2 cup cream cheese, softened
- 1 cup icing sugar, sifted
Creamy Vegetable Gratin

Heat a large sauté pan to medium heat
- 2 tbsp butter, divided (plus more for buttering the baking dish)
- 1 medium shallot, finely chopped
- 2 garlic cloves, minced, divided
- 10 large leaves of kale (curly or black), chopped small
- salt and white pepper
- 2 cups 35% cream
- 1/2 onion, make sure the root is still intact
- 1 bay leaf
- 4 cloves
- 3 sprigs thyme, divided
- 1 large sweet potato, peeled & thinly sliced
- 2 large Yukon gold potatoes, peeled & thinly sliced
- 1 cup shredded Canadian Gruyère
- 1/2 cup shredded Canadian Parmesan
- 1 medium yellow zucchini (summer squash), thinly sliced lengthwise
- 3 medium carrots, peeled & thinly sliced lengthwise
- 3/4 cup panko breadcrumbs
No-Bake Greek Yogourt Cheesecake

Spray an 8-inch springform pan with cooking spray and line bottom with parchment paper; set aside
- Greek Yogourt Filling:
- 1-1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 2 tsp unflavoured gelatin
- 3 tbsp orange juice
- 3 pkgs (8 oz. each) light cream cheese, softened
- 1 tub (500 g) plain Greek yogourt
- 3/4 cup icing sugar
- 1 tsp grated orange rind
- 1/4 cup liquid honey
- 3 tbsp sliced natural almonds, toasted
- Orange rind curls for garnish (optional)
Donut Muffins

- 1/2 cup white sugar
- 1/4 cup margarine, melted
- 3/4 teaspoon ground nutmeg

- 1 teaspoon baking powder
- 1 cup all-purpose flour

- 1/2 cup white sugar

Plant Based Non 'Sausage' Rolls

My preferred way of prepping this filling makes maximum use of my food processor
- 125 g pecans
- 1/2 cup breadcrumbs
- 1 onion
- 300 g pkt silken tofu
- 1 cup rolled oats
- 1 stock cube
- 1 teaspoon garlic powder
- 3 tablespoons soy sauce
- ground pepper, to taste
- 3-4 frozen puff pastry sheets
- water or non dairy milk for brushing pastry

Pumpkin Scones

Preheat oven to 400 degrees F (200 degrees C) and place rack in the center of the oven
- Egg Wash:
- 2 cups (260 grams) all purpose flour
- 1/3 cup (70 grams) light or dark brown sugar
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (113 grams) cold unsalted butter, cut into pieces
- 1/3 cup (50 grams) raisins
- 1/4 cup (30 grams) toasted and chopped pecans or walnuts (optional)
- 1/3 - 1/2 cup (80 - 120 ml) buttermilk
- 1/2 cup (120 ml) fresh or canned pure pumpkin (if using canned pumpkin make sure there are no spices or sugar added)
- 1 teaspoon pure vanilla extract
- 1 large egg
- 1 tablespoon milk or cream

- 2 tsp active dry yeast
- 1-1/4 cups warm water
- 3 tbsp sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 apple - peeled, cored, and chopped into small bits
- 2 tbsp vegetable oil
- 1 tsp salt
- 2-2/3 cups all-purpose flour
Easy Baked Fish

- 1/2 cup chicken broth
- 1/4 cup butter
- 2 tablespoons dry white wine
- 1 tablespoon fresh lemon juice

Ezekiel Bread Recipe

Combine and mix all ingredients in a mixer, add the Ezekiel Flour a little at a time
- 4 cups of Lukewarm Water
- 1 cup Honey
- 1/2 cup Oil
- 2 tsp. Salt
- 2 tsp. Yeast
- 5 cups of Ezekiel Flour
