Artichoke and Spinach Stuffed Shells

Preheat the oven to 375 degrees F (190 degrees C)
- 24 ounces spinach artichoke dip, at room temperature
- 1 cup ricotta cheese
- 1 egg
- 2 tablespoons fresh lemon juice
- 1 pinch crushed red pepper flakes, or to taste
- salt and freshly ground pepper to taste
- 1 (16 ounce) package jumbo pasta shells
- 2 cups white sauce (such as bechamel)
- 1 cup shredded Gruyere cheese
- 1/2 cup grated Parmigiano-Reggiano cheese
Pumpkin Shortbread Sandwiches

Preheat oven to 350°F (180°C)
- FILLING:
- 2 cups butter, softened
- 1 cup sugar
- 3 1/4 cups all-purpose flour
- 1/2 cup corn starch
- Orange coloured sugar (optional)
- 2 cups icing sugar
- 1/4 cup butter, softened
- 1-2 tbsp milk
- 1 tsp pure vanilla extract
- Drops of orange food colouring, if desired
"World's Best Cake" with Banana & Coconut

Preheat the oven to 350° F and place a rack in the middle
- 10 1/2 tablespoons (1 stick plus 2 1/2 tablespoons) unsalted butter, softened
- 1 2/3 cups sugar, divided
- 1 1/3 cups (170 grams) all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cardamom
- 1 pinch salt
- 5 large eggs, separated
- 1/3 cup whole milk
- 1/3 to 1/2 cups unsweetened coconut flakes (I like the large flakes, but you can use smaller flakes, too)
- 1 cup heavy cream
- 1 vanilla bean
- 1 to 2 bananas, sliced
Crispy Garlic Croutons

Preheat oven to 300. Line a baking sheet with a silicone baking mat
- 1/2 cup olive oil
- 4 cloves garlic, finely minced
- 1 (8 ounce) loaf French bread baguette, cut into 1/2-inch cubes
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon salt
- 1 pinch cayenne pepper
French Breakfast Muffins

- 1 1/2 cups all-purpose flour
- 1/2 cup white sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon ground nutmeg

- 1 egg, lightly beaten
- 1/2 cup milk

Vegan Shepherd's Pie

1. Peel and dice potatoes and sweet potatoes and cook them in salted water until soft
- 1 sweet potato - 350 g/0.7lb after peeling
- 2-3 potatoes - 350 g/0.7lb after peeling
- 2-3 tbsp almond milk (or milk of your choice)
- 1 onion
- 250 g/0.5 lb mushrooms
- 3 cloves of garlic
- 1 zucchini
- 2 carrots
- 4 celery sticks
- 1 bell pepper
- 1 aubergine
- 1/2 cup of frozen corn
- 1 cup of red wine
- 1 cup of tomato passata
- 2 tbsp balsamic vinegar
- 1 tsp dried summer savory
- 1 tsp smoked paprika
- 1 tsp fresh chopped rosemary
- 1 small handful of chopped fresh basil
- 1 small handful of chopped fresh oregano
- salt, pepper
Strawberry Pie

1. Arrange half of strawberries in baked pastry shell
- 1 (9 inch) pie crust, baked
- 1 quart fresh strawberries
- 1 cup white sugar
- 3 tablespoons cornstarch
- 3/4 cup water
- 1/2 cup heavy whipping cream
Nanaimo Bars

For the bottom layer: Melt first 3 ingredients in top of double boiler
- Bottom Layer
- 1/2 cup unsalted butter (European style cultured)
- 1/4 cup sugar
- 5 tbsp. cocoa
- 1 egg beaten
- 1 1/4 cups graham wafer crumbs
- 1/2 c. finely chopped almonds
- 1 cup coconut
- Second Layer
- 1/2 cup unsalted butter
- 2 Tbsp. and 2 Tsp. cream
- 2 Tbsp. vanilla custard powder
- 2 cups icing sugar
- Third Layer
- 4 squares semi-sweet chocolate (1 oz. each)
- 2 Tbsp. unsalted butter
