Spinach Artichoke Cups

1. Preheat oven to 375 degrees F
- 1 (8 oz.) package of light cream cheese, softened
- 1/4 cup mayonnaise
- 1/2 cup grated Parmesan cheese
- 3 garlic cloves, minced
- pinch of salt
- 1 (14 oz) can artichoke hearts, drained and roughly chopped
- 1 (10 oz) package frozen chopped spinach, thawed and drained
- 2 tubes of crescent roll dough
Pork Schnitzel

This is a family favourite meal
- 6 boneless pork cutlets (the thinner the better)
- 1/2 cup all-purpose flour
- 1 teaspoon seasoned salt (such as Lawry’s, or see below recipe for details on how to make your own clone-of-lawrys)
- 1/4 teaspoon freshly ground black pepper
- 1 egg, beaten
- 2 tablespoons milk
- 1 cup fine dry bread crumbs
- 1 teaspoon paprika
- Vegetable or Canola Oil for cooking
- Make your own seasoned salt for this recipe
- 2 tablespoons salt
- 2 teaspoons sugar
- 1 teaspoon paprika
- 1 teaspoon turmeric
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon cornstarch
- Combine and add 1 teaspoon of the mixture to the flour mixture in this recipe.
Swiss-French leek soup

In a large saucepan, melt butter on medium-high heat and cook leeks for 10 min, stirring frequently
- 2 tbsp butter
- 3 large leeks, rinsed well and sliced
- Salt and freshly ground pepper
- 1 - 2 cloves garlic, chopped
- 1 1/2 tbsp balsamic vinegar
- 4 cups beef broth, no salt added
- 1 sprig fresh thyme
- 8 slices baguette bread, toasted
- 5 oz (150 g) Canadian Swiss cheese, grated
Boilermaker Tailgate Chili

Heat a large stock pot over medium-high heat
- 2 pounds ground beef chuck
- 1 pound bulk Italian sausage
- 3 (15 ounce) cans chili beans, drained
- 1 (15 ounce) can chili beans in spicy sauce
- 2 (28 ounce) cans diced tomatoes with juice
- 1 (6 ounce) can tomato paste
- 1 large yellow onion, chopped
- 3 stalks celery, chopped
- 1 green bell pepper, seeded and chopped
- 1 red bell pepper, seeded and chopped
- 2 green chile peppers, seeded and chopped
- 1 tablespoon bacon bits
- 4 cubes beef bouillon
- 1/2 cup beer
- 1/4 cup chili powder
- 1 tablespoon Worcestershire sauce
- 1 tablespoon minced garlic
- 1 tablespoon dried oregano
- 2 teaspoons ground cumin
- 2 teaspoons hot pepper sauce (e.g. Tabasco™)
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 teaspoon cayenne pepper
- 1 teaspoon paprika
- 1 teaspoon white sugar
- 1 (10.5 ounce) bag corn chips such as Fritos®
- 1 (8 ounce) package shredded Cheddar cheese
Tofu Salad Sandwiches

Drain tofu; pat dry with paper towel
- 1 pkg firm tofu
- 1/2 cup Vegenaise (vegan mayonnaise)
- 1/4 cup finely diced dill pickles
- 1 green onion, minced
- 1 tsp chopped fresh parsley
- 1 tsp Dijon mustard
- 1/2 tsp turmeric
- 1/2 tsp salt
- 1/2 tsp pepper
Vegetarian Korma

Heat the oil in a skillet over medium heat
- 1 1/2 tablespoons vegetable oil
- 1 small onion, diced
- 1 teaspoon minced fresh ginger root
- 4 cloves garlic, minced
- 2 potatoes, cubed
- 4 carrots, cubed
- 1 fresh jalapeno pepper, seeded and sliced
- 3 tablespoons ground unsalted cashews
- 1 (4 ounce) can tomato sauce
- 2 teaspoons salt
- 1 1/2 tablespoons curry powder
- 1 cup frozen green peas
- 1/2 green bell pepper, chopped
- 1/2 red bell pepper, chopped
- 1 cup heavy cream
- 1 bunch fresh cilantro for garnish
Decadent Brownie Trifle

Roast hazelnuts in a 350F
- 100 g package hazelnuts
- 2 cups 35% cream
- 3 tbsp icing sugar
- 3 tbsp Frangelico liqueur plus more for the brownies and for drizzling (Optional)
- 90 g package instant chocolate pudding, made according to instructions
- Favourite brownie recipe or store bought

CHICKEN PIE WITH PUFF PASTRY

Heat oil in heavy based saucepan or frying pan over medium-high heat
- 1 tablespoon oil
- 400 g skinless chicken breast or thigh fillets, chopped into bite-sized
- chunks
- 100 g shortcut bacon, finely diced
- 1 medium leek, chopped finely
- 1 clove garlic, crushed
- 1 tablespoon butter
- 1 tablespoon plain flour
- 1/3 cup chicken stock
- 1/3 cup white wine
- 1/3 cup cream
- Salt and pepper, to taste
- 1/4 teaspoon nutmeg
- 1/3 cup (20g) grated tasty cheese
- 1-2 sheets frozen puff pastry, thawed
- 2-3 sheets frozen shortcrust pastry, thawed
Marshmallow Filled Sandwich Cookies

Directions: Cookies: Beat sugar, shortening and butter until light
- 1 cup (250mL) sugar
- 1/2 cup (125mL) shortening
- 1/2 cup (125mL) butter, softened
- 1 egg
- 1 tsp (5mL) vanilla extract
- 4 oz (125g) semi-sweet chocolate, melted
- 2 cups (500mL) All Purpose Flour
- 1/2 tsp (2mL) baking powder
- 24 marshmallows cut in half
- 3 cups (750mL) icing sugar
- 4-6 tbsp (50-80mL) water
- Food colouring (optional)
