Chicken Skillet with Mushrooms and Onions

HEAT large nonstick skillet on medium-high heat
- 4 small boneless skinless chicken breasts (1 lb./450 g)
- 2 onions, thinly sliced
- 1 pkg. (1/2 lb./225 g) sliced fresh mushrooms
- 2 Tbsp. Worcestershire sauce
- 1 pkg. (120 g ) Stove Top Lower Sodium Stuffing Mix for Chicken
- 1 cup hot water
- 1 cup Kraft 4 Cheese Italiano Light Shredded Cheese
Watermelon Salad with Pickled Onions and Feta

1. Combine first 3 ingredients in a small bowl, and let stand for 30 minutes
- 1 cup vertically sliced red onion
- 1/4 cup red wine vinegar
- 1/4 teaspoon kosher salt
- 1 1/2 tablespoons white balsamic vinegar
- 1 tablespoon extra-virgin olive oil
- 1/4 teaspoon freshly ground black pepper
- 2 1/2 cups cubed seedless watermelon
- 1 small cucumber, halved lengthwise and thinly sliced (about 1 cup)
- 1/4 cup (1 ounce) crumbled feta cheese
- 2 tablespoons chopped fresh mint
- 2 tablespoons chopped fresh basil
Loaded Mashed Potato Cakes

Mashed potato cakes have been a staple in my southern family all throughout my childhood
- 3 slices bacon
- 2 tablespoons butter
- 1 small onion, chopped
- 1 stalk celery, chopped
- 1/4 teaspoon minced garlic
- 1 1/4 cups mashed potatoes
- 1 cup shredded American cheese
- 3/4 cup all-purpose flour
- 1 egg, slightly beaten
- 1/4 teaspoon prepared yellow mustard
- 1/8 teaspoon ground black pepper
- 1 dash hot sauce
- 1 tablespoon vegetable oil
- 2 tablespoons sour cream

- 1/4 cup water
- 1 (12 ounce) container frozen whipped topping, thawed
- 2 cups watermelon

- 1 pound sweet Italian sausage, casings removed
- 2 tablespoons white wine vinegar
- 1 1/4 cups Bob's Red Mill whole grain medley
- 2 cups diced sweet onion
- 1 pound sliced wild mushrooms
- 2 ribs celery, sliced
- 3 cloves garlic, chopped
- 1 tablespoon fresh chopped thyme
- 6 cups unsalted chicken stock
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, for garnish
Jamaican-Style Jerk Chicken

- 1-1/4 lb. (565 g) bone-in chicken pieces (legs, breasts, thighs), skin removed

- 1 tsp. ground allspice
- 1 tsp. hot pepper sauce

In a large skillet, heat 1 tablespoon oil over medium heat
- 1 tablespoon plus 1/2 cup olive oil, divided
- 1/2 cup slivered almonds
- 1/2 cup sunflower kernels
- 2 packages (14 ounces each) coleslaw mix
- 12 green onions, chopped (about 1-1/2 cups)
- 1 medium sweet red pepper, chopped
- 1/3 cup cider vinegar
- 1/4 cup sugar
- 1/8 teaspoon pepper
- 2 packages (3 ounces each) chicken ramen noodles
