Cinnamon-Apple Cake

- 1 3/4 cups sugar, divided
- 1/2 cup stick margarine, softened
- 1 teaspoon vanilla extract
- 6 ounces block-style fat-free cream cheese, softened (about 3/4 cup)
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 teaspoons ground cinnamon
- 3 cups chopped peeled Rome apple (about 2 large) can sub gala or fugi
- Cooking spray
Seasoned Croutons

In ungreased 9 X 13 pan, combine the first seven ingredients
- 2 T. butter
- 1 T. olive or vegetable oil
- 1/4 t. garlic powder
- 1/4 t. onion powder
- 1/4 t. dried oregano
- 1/4 t. dried basil
- pinch salt
- 6 slices day old bread, cubed
Baked Chicken and Potato Dinner

Heat oven to 400*. Spray 15X10X1 inch baking pan with Pam
- 4 bone-in skinless chicken breast halves
- 4 medium russet potatoes, cut into 1" cubes
- 1 red or green pepper, cut into 1" X 1/2" pieces
- 1 medium onion, cut into 8 pcs.
- 2 T. butter, melted
- 1/4 C. Parmesan cheese
- 1 t. garlic powder
- 1 t. paprika

In a large bowl, combine the flour, sugar, baking powder, ginger, cinnamon, salt and cloves
- 2 cups all-purpose flour
- 1/4 cup sugar
- 2-1/2 teaspoons baking powder
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground cloves
- 1 egg
- 3/4 cup milk
- 1/4 cup canola oil
- 1/4 cup molasses

- 4 (6-ounce) skinless, boneless chicken breast halves
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/3 cup all-purpose flour (about 1 1/2 ounces)
- 2 teaspoons olive oil
- 2 teaspoons butter
- 1/2 cup white wine
- 1/2 cup fresh orange juice (about 2 oranges)
Roasted Pepper Pesto

Place all ingredients in a food processor; process until smooth, scraping sides of processor bowl occasionally
- 1 cup fresh basil leaves
- 1/4 cup (1 ounce) grated fresh Parmesan cheese
- 2 tablespoons pine nuts, toasted
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 pounds red bell peppers (about 4 large), roasted and peeled
Kale, White Bean, and Savoy Cabbage Soup

To prepare the soup, sort and wash the beans, and place in a large Dutch oven
- Soup:
- 1/2 cup dried cannellini beans or other white beans
- 6 cups water
- 1 1/2 teaspoons salt, divided
- 2 teaspoons olive oil
- 3 1/2 cups diced baking potato (about 1 pound)
- 1 1/2 cups diced onion
- 1 1/2 cups thinly sliced leek (about 1 large)
- 8 cups thinly sliced kale (about 1 bunch)
- 4 cups chopped Savoy cabbage (about 1 1/2 pounds)
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon black pepper
- 1 large garlic clove, minced
- Garlic toast:
- 8 (3/4-inch-thick) slices diagonally cut Italian bread (about 12 ounces)
- 1 garlic clove, halved
- 1/4 cup (1 ounce) grated fresh Parmesan cheese
Black and White Bean Chili

Heat 2 tbsp oil in a pot (substitute cooking spray for lower fat recipe)
- 1 cup chopped onions
- 1 garlic clove, minced
- 1/4 cup flour
- 1-2 tsp chili powder
- 1/2 tsp cumin
- 1 1/2 cups milk
- 2 (9 oz.) pkg. frozen white corn
- 1 (15 oz.) can great northern beans, drained and rinsed
- 1 (15 oz.) can black beans, drained and rinsed
- 1 (14.5 oz.) can chicken broth
- 1 (4.5 oz.) chopped green chiles
- 2 tbsp chopped fresh cilantro
- 2 tbsp finely chopped red bell pepper

In a 3-qt. slow cooker, combine the first nine ingredients
- 4 cups vegetable broth
- 3 cups sweet potatoes, peeled and cubed (about 1-1/4 pounds)
- 1-1/2 cups dried lentils, rinsed
- 3 medium carrots, cut into chunks
- 1 medium onion, chopped
- 4 garlic cloves, minced
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 1/4 cup minced fresh cilantro
- 1/4 teaspoon salt
Chinese Chicken Salad

- 3 cups cubed cooked chicken breast
- 3 celery ribs, chopped
- 1 cup canned bean sprouts, rinsed and drained
- 1/2 cup reduced-fat French salad dressing
- 1/2 cup fat-free mayonnaise
- 2 tablespoons reduced-sodium soy sauce
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon Chinese five-spice powder
