In a large bowl, combine the first six ingredients
- 1 cup all-purpose flour
- 2/3 cup old-fashioned oats
- 1/3 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1/2 cup 2% milk
- 1/2 cup mashed ripe banana
- 2 tablespoons canola oil
- 1/2 cup dried cranberries
- 1/4 cup chopped pecans
Parmesan-Cornmeal Sticks

Combine first 7 ingredients in a large bowl; stir well
- 1 cup. all-purpose flour
- 1/2 cup. yellow cornmeal
- 1/3 cup. grated Parmesan cheese
- 2 Tbs. sesame seeds, toasted
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 1/8 tsp. ground red pepper
- 1/2 cup. skim milk
- 1 Tbs. vegetable oil
Roasted Potatoes and Asparagus

Snap off tough ends of asparagus
- 2 pounds fresh asparagus
- 1 T. olive oil, divided
- 1 1/2 lbs. unpeeled round red potatoes, thinly sliced
- 2 about 2 large
- 1/8 t. salt
- 1/8 t. coarsely ground pepper
Pinto Bean Stew

Sort beans and rinse with cold water
- 1 cup dried pinto beans
- 2 cups cold water
- 1/2 cup chopped carrot
- 2 garlic cloves, minced
- 3/4 teaspoon chili powder
- 1/2 teaspoon salt
- Dash cayenne pepper
- 1 package (16 ounces) frozen corn, thawed
- 1 large onion, chopped
- 1 medium green pepper, chopped
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 2 to 3 teaspoons balsamic vinegar
- 1/4 teaspoon sugar
Fresh-Fruit Pizza with Lemon Curd

- 1 (18-ounce) package refrigerated sugar cookie dough
- Cooking spray
- 2 tablespoons seedless raspberry jam, melted
- 3/4 cup Lemon Curd
- 2 cups fresh raspberries
- 2 cups blackberries
- 1 cup sliced strawberries
- 1 plum, sliced
- 2 teaspoons sugar
Apple Butternut Soup

In a large saucepan coated with cooking spray, cook and stir onion in butter over medium heat until tender
- 1 small onion, chopped
- 1 tablespoon butter
- 1 garlic clove, minced
- 6 cups cubed peeled butternut squash
- 1 can (14-1/2 ounces) reduced-sodium chicken broth or vegetable broth
- 1 large apple, peeled and chopped
- 1/2 cup water
- 1-1/2 teaspoons minced fresh thyme or 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 cup half-and-half cream
Butterscotch Bars

Boil together for a good 2 minutes beaten eggs, sugar and oil
- 2 eggs, beaten
- 3/4 c. oil
- 1 c. white sugar
- 2 c. graham crackers, crushed
- 1 1/2 c. coconut
- 1 1/2 c. nuts
- 2 c. small marshmallows
- 6 T. peanut butter
- 2 (6 oz) pkgs butterscotch chips
Chilled Berry Soup

Place strawberries in a food processor; cover and process until pureed
- 1 quart fresh strawberries, hulled
- 1/3 cup ginger ale
- 1/4 cup milk
- 1/3 cup sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup (8 ounces) sour cream
New England Clam Chowder

In large dutch oven, cook bacon until browned, about 10 minutes
- 2 slices bacon, finely chopped
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 1/4 t. dried thyme
- 1 pound russet potatoes, peeled, cut into 1/2 inch chunks
- 1/4 c. white wine
- 2 bay leaves
- 4 (6 1/2 oz) cans chopped clams, drained
- 3/4 c. instant potato flakes
- 1 T. cornstarch
- 8 oz bottle clam juice
- 3/4 c. fat-free half and half
- 1 T. chopped fresh parsley
- salt and black pepper
Lemonade Ice Cream Sandwiches
